Have you ever heard of a soup against cancer? Tarhana, it is . . .


Tarhana (Turkish), trahanas (Greek) are names for a dried food based on a fermented mixture of grain and yoghurt or fermented milk, usually made into a thick soup with water, stock, or milk.
Tarhana is made by mixing flour, yoghurt or sour milk, and optionally cooked vegetables, salt, and spices , letting the mixture ferment, then drying, and usually grinding and sieving the result. Tarhana are cooked as a thick soup by adding them to stock, water, or milk and simmering. This soup is rich in vitamin A, B1, B2 and lycopene.
Tarhana is a traditional dish in Turkish cuisine refers to a dough or powder made using various vegetables, spices, yeast, and yogurt.

Ismail Çelik, the head of Department of Preventive Oncology of Hacettepe University, pointed out the importance of diet to protect our body against cancer. The professor advised people to eat what they learnt from their grandmothers, not from TV programs.

Make the tarhana soup : Need
1/2 cup tarhana, 1 tablespoon olive oil, 
4 cups water, tomato paste,1 tsp red pepper puree, butter, grated  cheese.
Soak the tarhana  in  warm water for at 
least 15 minutes.
Put to heat the soaked tarhana and olive oil
to a boil. Stir  for 15  minutes.  Add a little tomato paste, pepper puree  and salt to taste. Serve with grated cheese and some butter.
Also serve with bread croutons.
Things are much easier now as you can buy the Tarhana mix from Mediterranean grocery store.
