The Indian Condiment, Coriander| Mint or Green Chutney . .
Chutney is similar in consistency to jelly, salsa or relish, 

and is used as a sweet and sour condiment.
Green chutney, also known as coriander or Hari chutney,

is a refreshing Indian condiment.
Green Hari Chutney is usually prepared with coriander leaves, pudina| mint leaves is optional, also add green chillies, ginger, fresh grated coconut, salt and lemon juice.
Green|Hari chutney can be served as a dip or as a spread for sandwich.
Green chutney goes well with all tandoori dishes and most

North Indian snacks. It is a must in all chaat items along with the sweet chutney.
This is a wonderful condiment. Use it as a dipping sauce or as 

a sandwich spread.
The word chutney is derived from the East Indian word 

Chatni.
The Hindi word for "to crush" literally means "to make chutney." This signifies the process by which chutney
is made; often the ingredients are crushed together with a stone.
An unusual chutney recipe for all . . . 



GREEN GATHIYA DIP
INGS:
1\4 CUP CORIANDER LEAVES,
2-3 GREEEN CHILLIES,
2 CLOVES OF GARLIC,
A PIECE OF TOMATO, GINGER
AND ONION,
2 TBSP COCONUT GRATED,
4 TBSP GATHIYA,
1\2 TSP SUGAR,
SALT TO TASTE,
1 TBSP LEMON JUICE.
METHOD:
WASH THE CORIANDER LEAVES.
PUT ALL THE INGS IN A MIXER JAR AND
GRIND TO A PASTE THAT LOOKS LIKE CHUTNEY.
What are Gathiya...
Gathiya is a popular tea time snack

and is made of gramflour.
Make the lovely gathiya:
Ingredients:
Bengal gramflour (Besan),
Salt to taste,
Pinch of soda bicarbonate,
Oil for frying.
Method:
Mix besan, soda bicarbonate, salt.
Add some oil, use water to make a tight dough.
Use a gathiya maker and put oil to heat to fry the
gathiyas. Drop the gathiyas from the maker and fry.
