Matcha, also maccha, refers to finely-milled or fine powder green tea.
What is matcha?
Matcha tea is a variety of green tea with a very high polyphenol content. Polyphenols are thought to provide the antioxidant benefits of green tea.
What makes matcha tea so special?
Over a thousand years ago, matcha came to Japan as an aid to meditation practice. During long hours of sitting, monks would drink matcha to remain alert yet calm. Modern science has recently confirmed the lessons of centuries of tradition.
Matcha tea is a high-quality green tea that is covered before picking to accentuate the color, then stone-ground after being picked and before being sealed into small tins.
Matcha is an ancient Japanese shade grown and stone ground green tea dating back over 800 years. Coveted for generations by Japanese samurai, royalty, and Zen Buddhist monks as a meditational drink, matcha only recently became available in North America. Fresh matcha leaves are handpicked, dried and ground by low-friction granite stone mills into an ultra fine jade green powder, and finally whisked typically with a bamboo whisk.
The result is a remarkable jade green, delicate, smooth, and lightly sweet cup of green tea, which
 also contains unique catechins and amino acids.
You're probably already familiar with the marvelous health benefits of green tea. You may be less familiar with another form of green tea called matcha. Matcha is a green tea powder made from the leaves of tea trees grown in the shade and then light.
