DUM ALOO SPECIAL

DUM ALOO SPECIAL
INGS: 12 Baby Potatoes,
3 Small size Tomatoes,
4 Almonds,
4 Cashewnuts, 
2 Green Chilly,
2 Whole Red Chilly,
A piece Ginger,
4 Cloves Garlic,
3\4 Tsp Shahi Masala (or one clove,
a cardamom and a piece of cinnamon),
3 Tbsp Curd,
1 Large Size Onion,
1\4 Tbsp Cumin seeds,
1\4 Tbsp Red Chilly Powder,
1 Tbsp Coriander Powder,
1\4 Tbsp Garam Masala.
2 Tbsp oil, 1Tbsp Ghee, 
2 Tbsp Cream.
Salt, Sugar to taste.

METHOD: Soak the whole red chillies in hot water.
Boil the baby potatoes and in a pan with little oil, sauté for five minutes, sprinkle some salt and red chilly powder. Slice the onion and in a pan stir fry until golden brown.
In a mixer put cut tomatoes, cut green chillies, red chillies, a piece of ginger, few garlic, fried onion curd, the nuts and all masalas. Grind to a very fine paste, use water if needed.( except the oil, ghee, cream and baby potatoes).
Put a pan to heat add oil, the ground paste cook until oil appears or leaves the sides of the pan. Now add the baby potatoes, some cream and check the salt and sugar as per taste. Cover and cook on slow flame
for few minutes, serve hot.
