A Tava, also known as 'Tawah' is a large, flat or slightly concave disc-shaped griddle or skillet that is made from, iron, steel or aluminium . The Tava is used for shallow frying or making Indian breads and everything from chapattis, parathas, dosas, omlettes to pancakes. It is used to prepare several kinds of rotis or breads. Even Pao bhaji, Chaat items are done on the tava. Tava is also used to make South Indian dishes like Dosa.
So dishes like Kadhai Chicken, Kadhai Paneer and so on, which are prepared and served in this wok like pan get it name.

Kadhai/ Kadai
A' karahi' or' kadhai' is the Indian version of a Wok. It is a round deep pan made of heavy metal, with handles on both sides. The round Kadhai is used for sautéing, stir frying and cooking curries. The kadhai subzi | gravy when served in a kadhai on the table gives an authentic Indian look and feel. So dishes like Kadhai Chicken, Kadhai Paneer and so on, which are prepared and served in this wok like pan get it name.
