WHAT IS A ' CROQUETTE '....

A croquette is a small fried food roll containing usually as main ingredients mashed potatoes, and/or minced meat (veal, beef, chicken, or turkey), shellfish, fish, vegetables, and soaked white bread, egg, onion, spices and herbs, wine, milk, beer or any of the combination thereof, sometimes with a filling, often encased in breadcrumbs. The croquette is usually shaped into a cylinder or disk, and then deep-fried. A Croquettes is made from a  mixture of potato with ground cooked meat, fish or poultry formed into balls, patties or other shapes and coated with a breading before frying.

is very famous in northern  India. Croquettes are a popular choice for appetizers
or entrées in many different parts of the world.
They are mostly eaten as snacks at home and are also popularly sold by road-side vendors.
Do you have rice in the fridge , then try to  convert it in delicious croquettes by adding cooked leftover rice in the mixture of croquettes. Croquettes are a way of using up leftovers, like leftover vegetables, if extra white sauce is lying in the fridge. Also try adding some grated Parmesan cheese or mozzarella and see how tasty they will turn out. These can be quick,
bite size party starter also.

Mashed potatoes are boiled potatoes mashed 
up with a fork or potato masher, with bit of milk, butter, salt and pepper. 
Other popular  ingredients to add include, garlic, cheese, bacon bits, sour cream, onions. 
You can add whatever you think will taste good, if you like it you did it right!
