Chole bhature (Hindi: छोले भटूरे, Punjabi: ਛੋਲੇ ਭਟੂਰੇ) is a combination of chole (spicy chick peas) and fried bread called bhatoora (made of maida flour).
Chole bhature are served with onions and achaar.
It is mainly eaten in north India.
Bhatoora or Bhatura or Batoora, is a soft and fluffy deep-fried bread from the North India, and is often eaten with chickpea curry.
A typical recipe includes white flour (maida), yogurt, ghee or oil, and yeast. Once kneaded well, the dough
is left to rise, and then small balls of it are either hand rolled or flattened using a rolling pin. Then the bread is deep fried until they puff up into a lightly browned soft fluffy bread, which is elastic and chewy.
MAKE THE BEST BHATURAS :
Need: In 2 cups of Plain flour (maida), add 2 tbsp yoghurt, also try adding a small boiled potato that is mashed.
Remember to add baking powder, sugar, salt, hot oil, few spoons milk, when kneading the dough and keep aside for 1- 2 hrs.
TIP ONE
Have u tried adding soda from the bottle, when kneading the dough.
TIP TWO
Have u made dough using fine flour[ maida] 3 portion to semolina rava] one portion, i.e. 1: 3 ratio. Also add while making the dough Eno salt, sugar, oil and little curd to
knead the dough with water, allow to rest.
TIP THREE
Have u stuffed these bhaturas with paneer that is grated,
mix cut coriander leaves, green chillies n salt, red chilly pd.
TIP FOUR
Have u tried making masala bhaturas?
For that add while making the dough, some fried methi leaves, fried onions, also add coriander leaves, green chillies n rest of the ingredients will be same.
There are different varieties of bhature available such as aloo bhatura (bhatura filled with boiled potato), paneer bhatura (bhatura filled with cottage cheese) etc.
It is also called Chola poori since the bhatoora resembles a poori.
