INSTANT NOODLES PANCAKES

INSTANT NOODLES PANCAKES
INGS: 8-10 Tbsp Instant Noodles (2 minutes
Instant noodles, boiled),
2 Tbsp Carrot (grated),
2 Tbsp Cucumber (grated),
1 Tbsp Cabbage ( very finely cut),
1 Tbsp Capsicum ( finely cut ),
2 Tbsp Onion ( finely cut ),
1\4 Tsp Green Chilly ( cut ),
4-5 Tbsp Bengal Gram Flour,
1\4 Tsp Red Chilly Powder,
Salt to taste,
Oil to make pancakes.


METHOD: Boil the instant noodles for few minutes.
Take a bowl , mix all together except the oil to make
the pancakes. Sprinkle some water if needed.
Put a nonstick tava to heat. Spread some batter and make the pancakes.
Make small size pancakes, using oil, cook
until golden brown. Serve with tomato sauce.

QUICK SCHZEWAN RICE

QUICK SCHZEWAN RICE
INGS: 2 Cups Rice ( cooked) ,
3\4 Cup Vegetables like Cauliflower,
Cabbage, Carrot, Onion, Capsicum, Corn,
1 Tbsp Schzewan Sauce,
1 Tbsp Chilly Sauce,
1 Tbsp Oil,
1\4 Tsp Pepper powder,
Salt to taste.
GRIND TO PASTE:
2 Whole Red Chilly,
A piece of Ginger,
3-4 Cloves of Garlic.


METHOD: Put a pan to heat add oil, ground paste
and the vegetables. ( cut the vegetables into long pieces). Stir for few minutes. In the cooked rice add salt, pepper pd, chilly sauce, schzewan sauce, mix well, add to the pan . Serve hot.

PANEER SHASHLIK IN GRAVY

PANEER SHASHLIK IN GRAVY
INGS: GRIND TO A PASTE:
2 Tomatoes (blanched),
1 Onion chopped,
1 Green Chilly chopped,
A piece of Ginger,
2-3 Cloves Garlic chopped,
2-3 Almonds and Cashewnuts,
2 Tbsp Curd,
1\4 Tsp Turmeric Powder,
3\4 Tsp Red Chilly Powder,
1\2 Tsp Garam masala Powder.

PANEER SHASHLIK:
6-8 Toothpicks,
6-8 Pieces of Paneer ( cottage cheese),
6-8 Pieces Capsicum ( cut into small pieces),
6-8 Pieces Onion ( cut into small pieces),
6-8 pieces of Tomato ( cut into small pieces).

MARINATE: 4 Tbsp Curd, 2Tsp Garlic paste,
Little Salt and Red Chilly powder to taste.
2 Tbsp Oil, 2 Tbsp Cream and 1Tbsp Sugar.

METHOD: On the toothpicks arrange small pieces
of capsicum, tomato, onion and paneer. Mix the
marinate and drizzle on the skewered toothpicks.
Put a pan to heat add little oil and put all marinated
Toothpicks, when done keep aside.
FOR THE GRAVY :-
Grind all ingredients to a very fine paste.
Put a pan to heat add the oil, the ground paste and cook until leaves the sides of the pan. Now add salt, cream, sugar, if a few water is needed add, cover and cook. Drizzle the gravy on the paneer shashlik sticks to serve.

METHOD :-
IN THE WHEAT FLOUR ADD SOME ONION PUREE, TOMATO PUREE, GARLIC PASTE, SALT, TURMERIC POWDER AND CHILLY POWDER. MAKE A DOUGH , IF WISH TO MAKE CRISP PURIS ADD SEMOLINA AND FOR SOFT ONES ADD CURD| MILK.

INGS: 12 Baby Potatoes,
3 Small size Tomatoes,
4 Almonds,
4 Cashewnuts, 
2 Green Chilly,
2 Whole Red Chilly,
A piece Ginger,
4 Cloves Garlic,
3\4 Tsp Shahi Masala (or one clove,
a cardamom and a piece of cinnamon),
3 Tbsp Curd,
1 Large Size Onion,
1\4 Tbsp Cumin seeds,
1\4 Tbsp Red Chilly Powder,
1 Tbsp Coriander Powder,
1\4 Tbsp Garam Masala.
2 Tbsp oil, 1Tbsp Ghee, 
2 Tbsp Cream.
Salt, Sugar to taste.

METHOD: Soak the whole red chillies in hot water.
Boil the baby potatoes and in a pan with little oil, sauté for five minutes, sprinkle some salt and red chilly powder. Slice the onion and in a pan stir fry until golden brown.
In a mixer put cut tomatoes, cut green chillies, red chillies, a piece of ginger, few garlic, fried onion curd, the nuts and all masalas. Grind to a very fine paste, use water if needed.( except the oil, ghee, cream and baby potatoes).
Put a pan to heat add oil, the ground paste cook until oil appears or leaves the sides of the pan. Now add the baby potatoes, some cream and check the salt and sugar as per taste. Cover and cook on slow flame
for few minutes, serve hot.

QUICK PASTAS



       
QUICK PASTAS
INGS: 2 Cups Boiled Pasta(Penne),
           2 Tomatoes blanched and pureed,
          1 Onion chopped,
          1 Tbsp Ginger| Garlic paste,      
           2 Tbsp Capsicum,
           2 Tbsp Corn boiled,
           1 Tbsp White Sauce,
           2 Tbsp cheese grated,
           2 Tbsp Tomato Sauce,
           1 Tbsp Chilly Sauce,
           1 Tbsp Oil,
            1\4 Tsp Chilly Flakes,
            1\4 Tsp Oregano,
            1\2 Tsp Sugar,
            Salt and pepper powder to taste.

METHOD: Boil the pasta in lots of water with oil and some
salt added to it. Put a pan to heat add the oil, onion, ginger garlic
paste and the cut capsicum. Grind in a mixer the blanched tomatoes.
Now add the tomato puree, corn, chilly sauce, tomato sauce, white
sauce, chilly flakes, oregano, sugar, salt, pepper pd, also add the pastas
Mix well, check the salt and add the cheese . Serve hot with a little cream 
and some grated cheese.

TWO CHEESE SPINACH STARTER













INGS: 3-4 Tbsp Onion, 1Tbsp Cottage Cheese,
3-4 Tbsp Spinach (cut finely ), 1Tbsp Cheese( grated) ,
8-10 Tbsp Bread Crumbs,one Potato boiled and mashed,
Salt and pepper pd to taste, 1\2 Tsp Oil.


METHOD: Put a pan to heat add oil, onion, stir for few seconds then add the cut spinach and salt , pepper pd to taste.
Mash the boiled potato add salt,half the bread crumbs and the spinach. Mix well, make 4 balls out of this.
Now take the grated cottage cheese and the cheese , add little pepper pd and make small 4 balls out of this .
Place the small cheese balls inside the bigger potato balls, roll well and coat with the bread crumbs, fry in hot oil. Serve with tomato sauce.

TYPICAL UPMA
INGS: 2 Cups Semolina (Rava) ,
1 Onion chopped,
1Tbsp Oil ,
1\4 Tsp Mustard Seeds,
1 Tsp Urad Dal,
1 Green Chilly chopped,
Few Curry Leaves ,
1-2 Whole Red Chilly, 5 Cups Water,
Salt to taste.
METHOD: Put the water to boil. Take it off and keep aside.
Put a pan to heat add the oil in that add the mustard seeds, urad dal, curry leaves, green chilly, whole red chillies and the onion, stir for few minutes. Now add the semolina (rava), dry roast it and add the salt , the boiled water. Stir until thickens.
Garnish with green coriander leaves. Serve with coconut chutney.

USEFUL TIPS

TIP: AFTER HAVING SQUEEZED OUT THE JUICE OUT OF THE LEMON RUB THE SKIN WITH SALT ON COPPER, BRASS BOTTOM VESSELS THEY WILL SPARKLE...

LOVELY CUSTARD

LOVELY CUSTARD
INGS: 1 Cup milk,
1 Tbsp Vanilla Custard pd,
2-3 Tbsp Sugar,
1\2 Cup Fruits like Apple,
Banana, Chiku and Pomegranate.

METHOD: Mix in milk the custard powder
and put to boil, when it starts to thicken add
the sugar. Mix well. Allow to cool.
Cut the fruits into small pieces, add to the custard.
Put to chill in the fridge section and serve with a
drizzle of chocolate sauce in the inner wall of the
glass in which to serve.

INGS : 4-5 Small Burger Buns,
             7-8 Tbsp Baked Beans,
             2-3 Tbsp Onion (Cut),
             3\4 Tbsp Chilly Sauce,
             1-2 Tbsp Tomato Sauce,
             3\4 Tbsp Sugar, 1 Tsp Oil,
             Salt and Pepper pd to taste.

METHOD: Slit the burger buns into half,
apply butter, put in a pre heated oven at
150 degrees for 4-5 minutes. Check and
take them out.
Put a pan to heat add the oil, cut onion and
Stir. Now add the baked beans, chilly sauce,
tomato sauce, sugar and salt , pepper pd to
taste. Put the baked beans on the buns and
top with grated cheese. Again put them in the
oven for few minutes.

INGS: 2 Hot Buns,
1\2 Cup Mixed Vegetables(like Carrot,
Beans, Corn, Cauliflower, Babycorn, etc),
1 Tbsp Cottage Cheese (Paneer),
1 Tbsp Onion Chopped,
1 Tbsp Capsicum Chopped,
1 Tbsp Chilly Sauce,
2-3 Tbsp White Sauce,
1\2 Tsp Oregano,
1\2 Tsp Chilly flakes,
4-5 Tbsp Butter,
5-6 Tbsp Cheese Grated,
Pepper pd n Salt to taste.
METHOD: Boil the mixed vegetables until half cooked.
Drain the water. Put a pan to heat add one table spoon butter, the onion, capsicum both cut into small pieces. Now add the boiled vegetables, chilly sauce, white sauce, oregano, chilly flakes, mix well.
Also add salt and pepper powder. Take it off the heat and add small cut cottage cheese. Grate the cheese. Preheat the oven to 180 degrees, Cut the hot dog buns on top leaving the sides, then scoop them out.
Apply butter all over the buns and put the vegetable filling inside and top it with the cheese and put in hot oven until the cheese melts.

JEERA  RICE
INGS: 5 Cups Cooked Rice,
            3 Onions , Sliced ,
            3 Green Chilly, Slit,
            2Tbsp  Oil,
            2 Tsp Cumin Seeds, (jeera),
            2 Tsp  Cumin Powder, (jeera),
             Salt to taste.
METHOD: Put a pan to heat add the oil,
cumin seeds and the green chillies, also add
finely sliced onions, stir until turn brown in color.
Sprinkle some salt. Now add the cooked rice, cumin
powder and salt to taste. Serve with any type of dal.

SPICY POTATOES


SPICY  POTATOES
INGS: 2 Large Potatoes,
            2 Tsp Schewan Sauce,
            2 Tsp Chilly Sauce,
            1 Tsp Garlic Paste, 
            2 Tbsp Corn Flour,
            1\4 Tsp Red Chilly Powder,
            Salt to taste.
For the Stir Fry: 1 Onion,
                            4-5 Cloves Garlic,
                            2 Tbsp Schewan Sauce,
                            2 Tbsp Chilly Sauce,
                            2 Tbsp Tomato sauce,
                            1 Tbsp Oil, Salt to taste
                            1\2 Tsp Sugar.
                              .
METHOD: Boil the potatoes with the skin.
Cut into big pieces with the skin as wedges.
Marinate the potato pieces in schewan sauce,
chilly sauce, garlic paste, chilly pd and salt.
Put oil to fry to heat, on the potato wedges sprinkle
corn flour. Fry in oil and keep on paper tissue.
Put a pan to heat add the oil, garlic, onion, stir add
the chilly sauce, schewan sauce, tomato sauce .Also add the fried potato  wedges and  sugar, salt to taste. Serve hot.

TOOTH PICK BABY POTATOES
MARINATE:
INGS: 20 Baby Potatoes,
2-3 Tbsp Curd,
1 Tsp Ginger|Garlic Paste,
1 Tsp Red Chilly Pd,
1 Tsp Chaat Masala,
Salt to taste .
For the Stir fry :
1 Onion Chopped,
2 Green Chilly Chopped,
3-4 Garlic cloves Chopped,
1 Tbsp Oil, Salt.


METHOD : Boil the baby potatoes with salt.
Peel all the potatoes, marinate in curd mixture
as stated take a bowl mix the curd, ginger garlic
paste, salt, red chilly pd, chaat masala and the
baby potatoes.
Just before serving stir fry: Put a pan to
heat add oil add green chillies, garlic and the
marinated potatoes. Sauté for few minutes.
Check the salt , sprinkle some chaat masala
and serve hot.

2 Tbsp Fruits ( cut into small pieces)like
Apple, Chikoo, Banana and Pomegranate,
2 Tbsp Custard (thick, vanilla flavor),
2 Tbsp Jelly (strawberry flavor, not set fully),
2 Tbsp Vanilla Sponge cake pieces,
2 Tbsp Vanilla Ice Cream.


METHOD: In a single serve glass at the bottom
comes the small pieces of the sponge cake. On this
the fruits, followed by the custard and on top is the
jelly layer. Put in the fridge to chill .Just before
serving top it with ice cream and serve chilled.

WAFFER DELIGHT DIWALI SPECIAL..**$$$###

INGS :- 4 Waffer biscuits (Chocolate flavour ),
1 Tb sp Chocolate Sauce , Chocolate Icing ,
1 Fig , 3 Almonds , 3 Cashew nuts , 3 Pista ,
1 Tb sp Sugar .

METHOD :- Put a pan to heat add the sugar and as it melts add almonds , cashew nuts , pistas , pour in a plate and allow it to cool then crush it to a fine powder.
Soak the fig (Anjeer ) in hot water and when it softens , cut it in to very small pieces.
In a bowl mix chocolate sauce , chocolate icing , the small pieces of fig and crushed mixture of nuts.
Take the biscuit , cut it in to half (length wise ),
spread the chocolate mixture on the biscuit and close
it with the other piece of biscuit. In the same manner make the other three also. Put in the fridge
.

BROWNIE WITH ICE CREAM

BROWNIE WITH ICE CREAM
INGS: 1 Slice of Vanilla Ice Cream,
1 Piece of Chocolate Brownie or
Chocolate Cake piece,
2Tbsp Chocolate Sauce,
2 Tbsp Crushed Peanut Chikki,
( use praline if available),
Garnish: 8 Chocolate Chips Biscuits,
Vanilla Ice Cream, Chocolate Icing,
Silver balls.

METHOD: Make biscuit sandwich for the side garnish: Take two chocolate chips biscuit and in between the two biscuits, apply vanilla ice cream. Put in freezer section of the fridge to set. After an hour top the sandwich biscuit with some chocolate icing in the center. Sprinkle few silver balls. Make a quick butter icing by mixing 1tbsp icing sugar, 1tbsp butter, 1\2tbsp cocoa pd and a drop vanilla essence.
On a plate in the center place a slice of vanilla ice cream.
On this a piece of brownie, pour the chocolate sauce and the crushed praline or crushed chikki. For the final garnish place the sandwich biscuits and sprinkle some grated chocolate.
Make praline : put a pan to heat, add sugar (1-2 tbsp sugar), in this add 1-2 almonds and cashew nuts. Stir until sugar melts and starts to caramelise. Set it on a greased surface, crush and use.

HAPPY DIWALI TO ALL.....******######@@@@@@$$$$$$$

PALAK PANEER RICE

PALAK PANEER RICE
INGS:- 1Bunch of Spinach ( Palak )
(Blanched or boiled palak )
1\2 Cut Tomato,
1 Onion, 1 Green Chilly,
A small piece of Ginger,
3-4 Cloves of Garlic,
1\ 8 tsp Turmeric pd, Cumin seeds ,
1\2 tsp Garam masala,
1\2 tsp Sugar, 1-2 tbsp Oil.

METHOD :-Wash &clean the palak leaves and boil or blanch them. Grind to a paste, the palak eaves,tomato, onion, green chilly, ginger , garlic and add turmeric pd , cumin seeds . Put a pan to heat , add oil , then add the ground paste. Stir for 7-8 mins. Now add salt , sugar and some more garam masala . A tasty gravy to mix with the rice is ready.
Cooked rice needed: Soak 2 cups rice and cook in 4 cups of water. Also add some salt to the rice while cooking them.
The palak gravy is ready so is the cooked rice. The rice will be divided into two parts. Mix one part with the palak gravy, check the salt.
The second layer rice require: One Sliced Onion and a Green Chilly cut into small pieces, 1-2Tbsp Ghee, 1\4 Tsp Mustard Seeds, 2 Tsp Lime Juice, 4 Tbsp Paneer( Cut into small pieces) Salt to taste.
METHOD: Put a pan to heat , add the ghee the fry the panner Pieces until light brown in color, take them out. Now add the mustard seeds, green chilly and the onion. Stir and sprinkle some salt, add the half portion of cooked rice and the paneer pieces, also add the lime juice and this rice is ready. Layer the green rice and the onion\ paneer rice and serve.

BLUE SATIN

BLUE SATIN
INGS: 1 Tbsp Blue Curacao Syrup,
1\4 Glass filled with Crushed Ice,
7 up Soft Drink,
A Slice of Lemon for garnish.



METHOD: Fill 1\4 glass with crushed ice.
Pour the blue curacao syrup and on this pour the
soft drink(lemon flavor). Make a slit in the slice of
lemon and fix to the glass. Serve chilled.

QUICK CHAAT

QUICK CHAAT
INGS : 3\4 Cup Bengal gram flour,
1-2 Tbsp Onion and Potato,
2 Tbsp Carrot and Corn (grated),
1 Tbsp Paneer (grated),
1\8 Tsp Turmeric pd and Coriander pd,
1\2 Tsp Red Chilly pd, A Pinch Soda bi carb,
Salt to taste and 1 Tbsp Hot Oil.
METHOD: Make a batter of the above listed. Put oil to fry to heat and drop 15- 20 small pakoras, when golden brown take them out. Put in water to soak in which add some salt and red chilly powder has been added. Press and squeeze the water out after at least half an hour.


FOR THE CHAAT: NEED : 1\2 Cup Sev and Sprouts,
(Boil the sprouts with salt and some turmeric pd).
1\2 Cup Sweet Chutney,
1\2 Cup Green Chutney,
3-4 Tbsp Onion Chopped,
1 Cup Thick Curd,
(Churned and add salt, cumin pd, sugar and some red chilly pd).
Make the chaat by arranging 5-6 pakoras on this pour the curd put the sprouts, onion then the green chutney, sweet chutney,sprinkle the sev and garnish with pomegranate an coriander leaves.

PINK SATIN

INGS: 1 Tbsp Rose Syrup,
Or
1Tbsp Strawberry Crush,
Crushed Ice, Lemon Flavor
Soft Drink like 7 up…
METHOD: In a tall glass put the crushed ice
On it pour the rose syrup or the strawberry crush.
Now pour the soft drink and fix a lemon wedge
or a strawberry wedge if have used strawberry crush.

BEETROOT SUBZI WITH TAMARIND RICE
For the Beetroot Subzi : INGS:
1 Cup Beetroot (Cut into small pieces),
3-4 Tbsp Coconut ( Grated),
1 Tsp Oil, 1\4 Tsp Mustard Seeds,
1\2 Tsp Urad Dal, Few Curry Leaves,
1 Green Chilly (Cut), 1\4 Tsp Turmeric pd,
1\2 Tsp Red Chilly pd and Salt to taste.


METHOD FOR BEETROOT SUBZI :-

Put a pan to heat and add oil, mustard
seeds, curry leaves, urad dal , the cut green chilly,
then add the cut beetroot. Stir, also add some salt ,
turmeric pd and let it cook for 5 minutes. Now add
the red chilly pd and the grated coconut. Check the
salt and cook for 2-3 minutes and it will be done.


My living in the south of India for so many years helps me to bring the recipe of Tamarind rice. For that need :
MTR PULIOGARE POWDER AND COOKED RICE.
Boil the rice in a vessel with lot of water, when cooked drain the water and allow the rice to cool down.

(can add some salt).

METHOD: Put a pan to heat, add oil , mustard seeds, curry leaves, tamarind juice, (1-2 tsp urad dal opt), whole red chilly. Now take the tamarind powder in water and add red chilly pd and turmeric pd, put this to the above tempering , add the cooked rice and check the salt.. Serve with fried applams (papad of south).

GREEN SATIN
INGS: 1 Cup Freshly made Lemon Juice,
( Lemon juice + Sugar + Some water, one
Or two pinch salt, stir well . Make a tasty juice).
1\4 Cup Crushed Ice, 1 Tbsp Mint Juice| Paste.
( For the mint paste, grind mint leaves with few
Spoons of water, a pinch salt and few drops lime juice).

METHOD: In a tall glass, put the crushed ice, on it the
mint paste and the fresh lemon juice. Serve chilled with
a slice of lemon.

CHOCO BALLS

CHOCO BALLS
INGS: 6 Tbsp Bread Crumbs,
1-2 Tbsp Cashew pd,
1-2 Tbsp Sugar (Castor),
1 Tbsp Jam ( any),
1 drop Chocolate essence,
1\4 Tsp Cocoa pd,
1 Tsp Chocolate pd,
1 Tbsp Chocolate Sauce,
2 Silver Balls and 2 Paper Cups.

METHOD: Mix in a bowl the bread crumbs,
Sugar, cashew nut pd, jam, chocolate essence,
Cocoa pd, chocolate pd. Make two balls and coat
these with chocolate sauce and put in the fridge for
at least half an hour. Place the choco balls in the paper
cups and on top a silver ball. Put in the fridge and serve cold.
