WHAT IS JUNK FOOD..
Junk food is an informal term applied to some foods
that are perceived to have little or no nutritional value,
i.e. containing "empty calories"  to products with 
nutritional value, but also have ingredients considered unhealthy when regularly eaten; or to those considered unhealthy to consume at all. Michael Jacobson aptly 
coins the phrase junk food in 1972.
Junk foods are typically ready-to-eat and have no
health benefits.
Junk foods include salted snack foods like chips (crisps), 
candy, gum, most sweet desserts, fried fast food and
carbonated beverages (sodas)  as well as alcoholic
beverages. The soft drink, potato chips, hot chips,
ice cream, and hamburgers,hot dogs are called
junk food. Junk food refers to fast foods which are
easy to make and easy to consume.
They are zero in nutritional value. The taste is the 
most attractive feature in junk foods but have ill effect
on one’s health. Junk food addiction is so high because
of its simplicity and if time constraint is one reason that 
pushes you to eating junk food.
Coming to Indian junk food, locally called ‘chaat’, 
these mostly include the very famous samosas, kachoris, panipuris/golgappas and patties. These are fried items 
with various fillings within an outer layer made of 
refined flour.
In India, even Chinese food sold in road-side stalls 
is junk food because they contain high amount of 
Monosodium Glutamate (MSG).
Motto of life : 
Eat lots of fresh foods, healthy foods most of the time. 

Comfort foods may involve foods that have a 
nostalgic element either to an individual.
 They are foods consumed to achieve some level of 
improved emotional status, whether to relieve negative psychological affect or to increase positive feeling.

Convenience food, or tertiary processed food, is
commercially prepared food designed for ease of 
consumption.

Fast food means is the term given to food that can 
be prepared and served very quickly.
While any meal with low preparation time can be 
considered to be fast food.

A snack food  is a portion of food often  smaller 
than that of the regular meal and it is the in between food .

LAYERED VEGGIE OMLETTE..
INGS :
4 TBSP OIL,
4 - 5 ROUND SLICES OF POTATO,
ONION, CUCUMBER, BRINJAL.
2 TBSP CUT PIECES OF TOMATO,
1\2 TSP CUT GREEN CHILLY,
SALT AND PEPPER POWDER TO
SPRINKLE.
FOR THE BATTER..
1\2 CUP BENGAL GRAM FLOUR,
FEW PINCHES OF RED CHILLY POWDER,
FEW PINCHES OF PEPPER POWDER,
1 -2 PINCH TURMERIC POWDER,
SALT TO TASTE.
METHOD :
MAKE A BATTER OF GRAM FLOUR, SALT,
RED CHILLY POWDER, PEPPER POWDER
AND TURMERIC POWDER , USING WATER.
PUT A PAN TO HEAT ADD 2 SPOONS OF OIL,
PLACE POTATO SLICES, BRINJAL, CUCUMBER,
AND ONION, ON THESE SPRINKLE SALT AND
PEPPER PD.
POUR THE BATTER ON IT , PUT CUT PIECES OF TOMATO. ALLOW TO COOK FOR FEW MINUTES,
NOW TO TURN WITH THE HELP OF A SPOON,
SEE THAT IT LEAVES THE PAN.
PLACE A PLATE ON THE PAN AND TURN THE PAN,
GENTLY SLIDE INTO THE PAN. USE SOME OIL,
COOK UNTIL GOLDEN BROWN IN COLOR.
SERVE WITH TOMATO CHUTNEY AND GREEN CHUTNEY.

The difference between margarine and butter?

What is Margarine ?
Originally developed as an alternative to butter,
margarine is vegetable fat that is processed into
a spread that can be used in just about every 
recipe or application that calls for butter.
Butter is made from real cream. Margarine is 
made from vegetable oil.
In general use, the term "butter" refers to the 
spread dairy product.
The word commonly is used to describe puréed
vegetable or nut products such as peanut butter
and almond butter.
Churning produces small butter grains floating 
in the water-based portion of the cream.
This watery liquid is called buttermilk.
Butter making involves cream  usually collected 
from several milkings and was therefore several 
days old and somewhat fermented by the time it
was made into butter.
Butter made from a fermented cream is known as
cultured butter.
Butter made from pasteurized fresh cream is called
sweet cream butter.
Butter made from fresh or cultured unpasteurized 
cream is called raw cream butter.
Most frequently made from cows' milk, butter can 
also be manufactured from the milk of other mammals, including sheep, goats, buffalo, and yaks. Salt,
flavorings and preservatives are sometimes added
to butter.
It generally has a pale yellow color, but may vary .

Butter has many nutritional benefits where
margarine has a few only.
Butter has been around for centuries where 
margarine has been around  for less than 100 years.
And now, for Margarine. Very high in trans 
fatty acids.
Butter is loaded with saturated fat, which can
raise your cholesterol.
It can also increase your chance of heart disease.
Most margarines, on the other hand, have some
saturated fat plus trans-fatty acids, which can
also be bad for you.
TIPS FOR HEALTHY COOKING..
Use olive or canola oil instead of butter or
margarine.
Choose "light" margarines that list water as 
the first ingredient. These are even lower in 
saturated fat.

Hushpuppies are the Cornbread Balls had as a savory, starch-based food made from cornmeal batter that is deep fried or baked in small ball or sphere shapes, or occasionally oblong or ring shapes. Hushpuppies are frequently served as a side dish.

WHAT IS ARRABBIATA SAUCE..

Arrabbiata Sauce is a light Italian sauce 
that is given an extra spicy flavor by adding
hot peppers to the sauce. Arrabbiata sauce 
of garlic, tomatoes, and red chili cooked in 
olive oil. Basil is sometimes used, although
the majority of chefs in Italy do not use basil
for this recipe.
The dish is usually served with pasta and 
chopped fresh parsley sprinkled on top.
Arrabbiata Sauce will go well with any plain 
pasta, and it is often best enjoyed with penne.
The principle ingredients of Arrabbiata Sauce 
are tomatoes, tomato paste or sauce, chopped
parsley, garlic, onions, Italian seasonings and 
of course chopped red pepper and/or red pepper
flakes. Garlic and parsley are simmered first in a little olive oil, and then the lengthiest cooking process is cooking onions. They should be sauteed over 
medium heat for about ten minutes, allowing 
them to soften and sweeten up. The rest of the ingredients are added when the onions are 
properly cooked, and cooking time in recipes
varies greatly.
Some recipes suggest a cup or more of 
Parmesan be added.
A RECIPE 4  'Arrabbiata sauce :'
ings : 
    2 tablespoon olive oil
    2 medium onion, finely chopped
    3 cloves garlic, cut,
    4-5 tomatoes, crushed in food processor,
    2  tablespoon hot peppers, chopped ( capsicum ),
    1 cup vegetable stock,
    1 tablespoon  sugar,
    2 - 3 teaspoon crushed red chilly  flakes,
    salt and freshly ground black pepper to taste,
Directions:
In a large, pan on high heat, cook onion, 
and garlic in oil.
When onions are soft, add  tomatoes 
and all other ingredients.
Reduce heat to a simmer and let simmer,
stirring occasionally, until flavors have
blended and sauce has reached desired
consistency.
Season with salt and pepper, and if 
sauce is acidic, add a little extra sugar.
Serve over your favourite pasta

WHAT IS RANCH DRESSING..


Ranch dressing is a condiment made of buttermilk
or sour cream, mayonnaise, minced green onion, 
garlic powder, and other seasonings mixed into a 
sauce.
Ranch dressing is one of the two most popular
styles of salad dressing in the United States,
together with Italian dressing.
Ranch dressing has been the best-selling 
salad dressing in the United States since 
1992, when it overtook Italian dressing. 
It is also popular as a dipping sauce.
So always thought it was the combination 
of mayonnaise and sour cream
(or something like buttermilk) that gives 
ranch dressing that ever so slightly
tang to it. Then add some seasonings 
like dill, pepper,  garlic and onion and
you've got yourself something delicious. 
In 1954, Steve and Gayle Henson they 
served guests a dressing that Steve had 
developed in Alaska. The dressing got 
popular, and they began selling bottles
that guests could take home, and later 
opened a factory to sell packets of ranch 
seasoning.

Ranch dressing is a common dipping 
sauce for vegetables such as broccoli
and carrots, as well as for chips and 
"bar foods" such as french fries and
chicken wings. It is also a common 
dipping sauce for fried foods such as
fried mushrooms, fried zucchini, jalapeno
poppers, onion rings, chicken fingers,
and many others. In addition, ranch 
dressing is used on pizza, pickles,
baked potatoes, wrap sandwiches,
tacos,  and hamburgers.
A RANCH DRESSING RECIPE... 
1 cup mayonnaise,   1/2 cup sour cream, 
1/4 cup of milk , 1 teaspoon parsley,  
1 teaspoon garlic powder or grated fresh garlic ,  
1 teaspoon chopped onion.  
How to make it  : Just mix all of the 
ingredients together and chill and serve.

ANOTHER RANCH DRESSING..
RANCH DRESSING  INGS ;   
3 cloves garlic cut, 1/4 cup sugar,
1/4 cup vinegar, 1/2 cup olive oil, 
2 cups mayonnaise, salt and pepper powder,
2 teaspoons dry mustard powder,
1 tablespoon fresh oregano,
1/2 cup onion cut,
1 tablespoon fresh basil.   
Procedure :  Mix all the ingredients in a 
large bowl. Serve chilled.

Alfredo sauce...

Alfredo sauce is a white sauce which is often used 
to accompany pasta dishes.
Traditionally, it was made with butter and Parmesan
cheese, but more modernly, and especially in the 
United States, Alfredo sauce also includes heavy cream.
In many parts of the world, Alfredo sauce is prepared
separately from the pasta, and it is sometimes also
available for sale in jars at stores.
In Italy, the country where the inspiration for 
the sauce can be found, Alfredo sauce is not made
separately from the pasta. Instead, the ingredients
are added to the pasta individually and the whole 
mixture is tossed to coat the pasta.
Fettuccine 'Alfredo'  is a pasta dish made from 
fettuccine pasta tossed with Parmesan cheese and
butter. As the cheese melts, it absorbs the liquids 
to form a smooth and rich coating on the pasta.
It was named by an Italian restaurateur at his restaurant
Alfredo Alla Scrofa in Rome. A thick, creamy white sauce composed of butter, cream, and eggs used in Italian cuisine.
Make Alfredo Sauce in a pan, cook pasta while
you heat cream, butter, and Parmesan cheese on
low heat. You can also add ingredients such as parsley
or nutmeg.
For a more complex layer of flavor, caramelize onions 
and or garlic in the pan before adding the dairy
ingredients. Once the pasta has cooked, toss the pasta
with the sauce to coat, or pour the sauce on top. 
If you wish to add ingredients like vegetables then,
layer them on top of the pasta before pouring the sauce on.
You can also thicken this Alfredo sauce with a roux, 
if a thicker cream sauce is desired.
what does ' Roux' mean in cooking ?
"Roux" is the French word for "brown," and
brown describes a roux in color.
A roux is a base for gravies, soups, etouffee,
gumbo and many other Cajun and French dishes.
The first rule of roux is patience.
A roux can take a while as long as an hour to
reach the desired stage of brown.
The second rule of roux is to have a heavy pot 
and a wooden spoon.
Cooking the roux slowly and evenly is a must
to prevent burning.
Recipe of Alferdo Sauce..
Ingredients:  1 cups heavy cream, 3 tbs butter, 
120 grams grated Parmesan cheese, 
3\4 tsp salt, fresh ground black pepper and  
pinch of fresh-ground nutmeg.
METHOD : Mix cream and the butter in a  
pan large enough to accommodate the sauce
and later the pasta also.  Heat over a low flame 
the butter and the cream , until it comes
to a bare simmer. Now remove the pan from the
heat, once the butter is evenly incorporated into 
the cream.  Cook the pasta, draining it a little 
before it reaches the al dente stage. 
The pasta should be slightly undercooked before
being added to the sauce because it will continue 
to cook while the sauce is being finished.  
  Add the drained pasta,  cream, the cheese, the salt, 
the nutmeg, and  pepper powder to the pan.   
Heat the pasta and sauce over a low flame, 
tossing continuously, until the cheese melts into
the sauce and the sauce thickens slightly, about one
to two minutes. You can add chopped parsley 
as a garnish .

TIP 2 MAKE JALAPENOS AT HOME..
BUY BHAVNAGARI GREEN CHILLIES,
WASH THEN CUT THEM INTO ROUND SLICES.
PUT THEM IN VINEGAR, ALSO ADD SALT, PEPPER
POWDER AND FEW PINCH OF SUGAR. 
MAKE A DOUGH AT HOME FOR THIS STARTER..
1 CUP MAIDA, ADD 1 TBSP CORN FLOUR, 1 TBSP
RICE FLOUR AND LITTLE SALT, MAKE A DOUGH USING WATER.
MIX TOGETHER THE CHEESE, OLIVES, JALAPENOS,
SALT AND PEPPER POWDER. PUT A TEA SPOON OF THE FILLING IN THE SAMOSA WRAP OR SPRING ROLL WRAP, GIVE LONG ROLL SHAPE AND SEAL WITH A
PASTE OF MAIDA + WATER.
FRY IN HOT OIL, ON SLOW FLAME UNTIL GOLDEN BROWN.

WHAT IS 'PICKLING' ALL ABOUT...

The true history of the pickle is somewhat of 
a mystery. Although some believe it dates back
to India 4030 years ago.
Pickling has been used to preserve food for 
almost 5,000 years. The pickle is both a fruit 
and a vegetable.
Spicy pickles are very important item in 
Indian meal. Pickles enhances the tastes
of the meal and increases the satisfaction
after every meal. Pickles are easy to prepare 
with right ingredients and can be preserved
for months. The pickles give the great taste 
for meals.
It is really very boring for the Indians 
particularly to have the meals without any 
pickle along with the meals.
Indian pickles are in a wide variety with lots
of different taste.
Vegetables used for pickling are first soaked in salt,
turmeric and vinegar solution for a day or  two. 
This preliminary process removes excess moisture
in the vegetables, helping them to remain crisp and
last for a long time.
Pickles can be made from a wide variety of fruit and 
vegetables. Few vegetables to mention like the mango,
lime, cauliflower, carrot,cucumber, green chilly pickles 
are everyone's favorite.
Some fruits that can be pickled are the plums, apples, 
peaches , pears and cherries.
Who does not like the pickles, the pickles are the
weakness of every one.
At my home, nobody is ready to have the meals 
without the pickle.
One spoon of tasty, tangy and salty pickle is a must
and should for the lunch and the dinner.
The finger licking mango pickle is a favorite of many.
As mangoes are available only during the summer season,
housewives are busy making pickles.
As soon as the  raw mangoes appear in the market,
people start making the pickles to use later through 
out the year.
This pickle is made to use for the whole year, that is 
till the next mango season starts.
TIP TO SELECT THE BEST MANGOES 
FOR  PICKLING..
For pickle, use raw sour mangoes.
The mangoes should be tight, not soft or wrinkled.
Wash them thoroughly and dry them well.
Any remaining moisture may spoil the pickle.

MAKE MOST TASTY
GULAB JAMUNS EVER..
INGS :
500 GRAMS MAWA (KHOYA,)
100 GRAMS SEMOLINA,
50 GRAMS MAIDA,
A PINCH SODA,
FOR THE SUGAR SYRUP
1 KILOGRAM SUGAR,
500 ML OF WATER.
METHOD ;
PUT SUGAR AND WATER TO HEAT. 
LET IT BOIL UNTIL THICK.
CRUMBLE  THE MAWA,(KHOYA) WITH
YOUR HANDS, ADD IN THIS SODA, MAIDA
AND SEMOLINA, MIX WELL, USING WATER
MAKE A DOUGH.
RUB THE DOUGH WITH YOUR PALM,
UNTIL SMOOTH.  
MAKE BALLS AND FRY IN OIL ON 
SLOW FLAME UNTIL GOLDEN BROWN.
PUT IN SUGAR SYRUP.
MAKE IN SMALL QUANTITIES..

FOR THE GULAB JAMUNS..
3 Cups of Dry Milk Powder ,
1 Cup Maida,
3 Pinches of Baking Soda,
1/2 Cup milk,
1/2 cup water,
Thick Cream 200 grams,
Oil for Deep Frying.
FOR THE SUGAR SYRUP..
3 Cups Sugar,
3 Cups of Water,
2 Green Cardamoms crushed to powder.
Tip: use very low heat while frying.
METHOD :
Put a pan to heat add the sugar and water, 
allow to boil until it thickens.
Also add crushed cardamom.
In a bowl mix flour ( maida ), milk powder, 
cream, baking powder, milk and using water
make a dough. Use water to knead the dough, 
as much needed.
Make balls with out any cracks, put oil to
heat and fry on slow flame until dark golden
brown.

Quick Bruschetta.


Quick Bruschetta..
ings :
5-6 slices cut from a french loaf,
2 tbsp grated cheese,
2 tbsp cut onion,
2 tbsp cut capsicum,
2 tbsp boiled sweetcorn
1 tbsp black olives cut into pieces,
1\2 tsp chilly flakes,
1\2 tsp oregano,
1 tbsp butter to apply,
salt to taste..
method :
Pre heat the oven, at 180 degrees
centigrade for 10 minutes.
Apply butter on one side of the cut
slices of the french bread.
The buttered side is the bottom side and
on the above side spread the mixture of
the cut vegetables, cheese , chilly flakes,
oregano and salt.
Put in hot oven the bread slices
become crisp.

What are ‘ Bruschetta ' ?
Bruschetta is an appetizer from central Italy ,
it consists of grilled bread rubbed with garlic 
and topped with extra-virgin olive oil , salt and
pepper. Variations may include toppings of 
spicy, red peppers , tomatoes and other 
vegetables, beans, cured meat, or cheese; 
the most popular recipe outside of Italy 
involves, basil fresh, tomato, garlic and onion
or mozzarella. Bruschetta is usually served as 
a  ' snack or appetizer'.

Dosa Bonda



Dosa Bonda
Ings :
2 Boiled and mashed Potatoes,
1 Tbsp grated Coconut,
1 Tbsp Coriander leaves,
Few drops of Lime juice,
1 Green Chilly Cut,
1\ 8 Tsp Red Chilly Powder,
Few Pinch Chaat Masala.
For the Batter..
1 Cup Dosa or Idli batter
( use leftover batter, if possible ),
Salt and Red Chilly Powder to taste,
1- 2 Pinch Soda,
1 Tbsp cut Coriander leaves,
1\2 cut Green chilly.
Oil for frying.
METHOD :
Take the boiled and mashed potatoes in a
bowl and add masala, green chilly and
coriander leaves. Give shape of balls.
Stir the batter and add salt, chilly powder,
soda and cut chilly, also the coriander.
Put oil to heat, dip each ball in the batter
and fry in oil until golden color.
Serve with green chutney.

TAKE CARE OF THESE WHILE BAKING....

' BAKING'   means to cook by dry heat as in 
an oven. Baking is so much more enjoyable 
when you're prepared.
Read recipe several times.
Keep all ingredients ready before starting.
Improper measuring is probably the number
one reason recipes fail.
Flour is crucial part of the  baked goods.
Try to correctly measure flour, use a spoon 
to lightly scoop flour out of its container into 
a measuring cup. Continue until the cup is 
overflowing. Then use the back side of a 
knife to level off the flour even with the top 
edge of the measuring cup. Repeat as necessary, 
with 1 cup, 1/2 cup, 1/3 cup, and 1/4 cup measures.
  One cup of white flour weighs 120 grams.
  One cup of whole wheat flour weighs 140 grams.
  One cup of bread flour weighs 130 grams.
  One cup of cake flour weighs 114 grams.
The most common mistake made in measuring 
flour is to dip the measuring cup into the flour
instead of lightly spooning flour into the measuring 
cup. This can result in up to 25% more flour than the 
recipe calls for.

Just What is Baking Soda?:
It is also known as Bicarbonate of Soda and
Sodium Bicarbonate.
Baking soda promotes leavening by releasing 
carbon dioxide. The carbon dioxide causes
bubbles which make your cakes, cookies
and breads lighter by expanding the dough
and/or batter. Also known as Bicarbonate
of Soda. When mixed with acids such as
buttermilk or yogurt, it produces bubbles 
which causes baked goods to rise.
Baking powder is that ingredient that causes
breads or cakes to rise.
It is usually composed of baking soda, cream 
of tarter and cornstarch.
In baking ' to beat ' means  mix rapidly to
make mixture smooth using an electric mixer,

There are so many words used related 
to food, that we always wanted to know ,
what they actually meant..
What are ‘ Bruschetta '

Bruschetta is an appetizer  from central Italy , 
it consists of grilled bread rubbed with garlic
and topped with extra-virgin olive oil , salt 
and pepper.
Variations may include toppings of spicy, 
red peppers , tomatoes and other vegetables, 
beans, cured meat, or cheese; the most popular 
recipe outside of Italy involves, basil fresh, 
tomato, garlic and onion or mozzarella.
Bruschetta is usually served as a ' snack
or appetizer'.
Appetizers, are food items served before 
the main courses.
Finger food is food eaten directly using
the hands, in contrast to food eaten with
a knife and fork ,chopsticks, or other utensils.
In some cultures, food is almost always eaten 
with the hands.
An Entrée is one of several savory courses 
in a Western-style and South American-style 
formal meal; specifically, a smaller course
that precedes the main course. 
The Entrée is called the first course,
appetizer or starter.

A Main dish is the featured or primary 
dish in a meal consisting of several
courses. It usually follows the entrée
("entry") course, and the salad course.
The main dish is usually the heaviest, 
heartiest, and most complex or
substantive dish on a menu.
A full course dinner is a dinner consisting
of multiple dishes, or courses.
In its simplest form, it can consist of three
or four courses, such as soup, salad,  meat 
and dessert.

Cocktail is an alcoholic mixed drink that 
contains two or more ingredients , at least 
one of the ingredients must be a spirit. 
Cocktails were originally a mixture of spirits,
sugar, water, and bitters.  The word has come
to mean almost any mixed drink that contains
alcohol. 
A cocktail today usually contains one or more
kinds of spirit and one or more mixers, such
as soda or fruit juice. Additional ingredients 
may be ice, sugar, honey, milk, cream, and
various herbs.

A Canapé is a small, prepared and usually
decorative food, held in the fingers and
often eaten in one bite.Because they are
often served during cocktail hours, it is 
often desired that a canapé be either salty 
or spicy, in order to encourage guests to 
drink more.
A canapé may also be referred to as finger 
food, although not all finger foods are canapés.
Crackers or small slices of bread or toast or 
puff pastry, cut into various shapes, serve 
as the base for savory butters or pastes.
A  vol-au-vent in French means  a small 
hollow  case of puff pastry. A round opening
is cut in the top and the pastry cut out for the
opening is replaced as a lid after the case is filled.
Vol-au-vents can accommodate various fillings,
such as mushrooms, prawns, fruit, or cheese.
Mascarpone  is an Italian triple-cream cheese .

Sorbet is a frozen dessert made from sweetened 
water flavored with fruit , typically juice or puree,
wine, and/or liqueur..
Sorbets/sherbets may also contain alcohol, 
which lowers the cold temperature, resulting
in softer texture.
Ice cream is a frozen dessert usually made 
from dairy products, such as milk and cream, 
and often combined with fruits or other 
ingredients and flavors.
Most varieties contain sugar, the meaning 
of the term ice cream varies from one country 
to another.
Terms like frozen custard, frozen yogurt, 
sorbet, gelato and others are used to distinguish different varieties and styles.. 
Granita  is a semi-frozen dessert made from sugar,
water and various flavorings.

Pudding characteristically denotes a sweet
milk-based dessert similar in consistency to
egg-based custards, though it may also refer
to other types such as bread and rice pudding.
Gelato is an ancient Italian frozen dessert, a far
more recent variant of which is the American 
ice cream. As such, gelato is made with some
of the same ingredients as most other frozen 
dairy desserts. Milk, cream, various sugars,
flavoring including fruit and nut purees are
the main ingredients.
Gelato is different from some ice cream because 
it has a lower butterfat content. Gelato typically
