WHY DO WE PASS GAS ??....

Everyone has gas. Burping and “passing gas” is normal. All experience bouts of gas, sometime or the other. The collected foods give off gases that can cause bloating. Gas is a natural byproduct of the body. Generally the gas in the body is
odorless. Gas may  cause bloating and pain.
The odor of passed gas if any is due to sulfur made
by bacteria in the large intestine.
Everyone has gas in the digestive tract.
Try to chew the food, avoid gulping and eating
fast which will result in swallowing more air.
People who swallow a lot of air, fart more
than people who don't. This can be cured
by chewing with your mouth closed, eating
more slowly, and not gulping food or liquids.
Try to avoid foods, flatulence-producing foods
that are  high in certain polysaccharides.
Those foods include beans, lentils, dairy products,
onions, garlic, scallions, leeks, turnips,radishes,
sweet potatoes, potatoes, cashews,  artichokes, oats,
wheat, and yeast in breads. Cauliflower, broccoli,
cabbage, sprouts .
Try to avoid anxiety as it involves taking in more air.
A few changes in diet and chewing food properly
helps a lot.
There are ways to minimize the occurrence of
gas that occurs normally. Some foods cause
gas more than do other foods. Knowing which
foods may cause more of a gaseous reaction will
help you adjust your diet to decrease the amount
of gas you produce. Changing your diet, to eliminate
gas-causing foods is one way to reduce formation of less gas.

"Happy and successful cooking comes from the heart and also needs enthusiasm and a deep love of food to bring it to life...
If people take the trouble to cook, you should take the trouble to eat.”
Good painting is like good cooking; it can be tasted, but not explained.

Cooking is a pleasant experience and when cooking is done with a lot of  love.

I love cooking for my friends  and cooking for my family.

WHAT IS A 'FOOD ALLERGY' &&&&&...

Allergy:  The body's exaggerated reaction to a foreign substance..
Allergen:  A substance that produces an allergic reaction...
A food allergy is a term that health experts reserve for any abnormal reaction by the body's disease-fighting immune
system to an otherwise harmless food or component of food.

For a person having a food allergy just eating or swallowing
a tiny amount of a particular food could  cause symptoms,
such as skin rash, nausea, vomiting, cramping, and diarrhea.
It is just that the body is reacting to something that is
otherwise harmless, and it is a  type of  allergic reaction
the body is giving. When just a reaction to a particular food occurs, and it does not involve the body's immune system,
then it is called food intolerance. This is not a food allergy…
The people having food allergies need to know which foods
to avoid, how to recognize the symptoms.
Only a small fraction of the population have a genuine allergic reaction to food that is a true food allergy.
Food intolerance is a abnormal physical reaction to a food
or food additive that could be any
  • artificial coloring or preservative that does not involve an immune reaction. A chemical deficiency
  •  in the body is usually the cause of the problem…
  • i.e 'food in tolerance'.
  • Studies have found that 80 to 90 percent of children  with food allergies are allergic to one or more of these foods: Like  Eggs, Peanuts, Milk, Wheat, Soy.  Some other common triggers are the ‘tree nuts'  like almonds, cashews, walnuts and Brazil nuts. Fish and Shell fish like crab and shrimp
  • also could be a reason for the body to show food intolerance.

So it is not breakfast, lunch, or dinner but rather is eaten when  a person is hungry between the meals to get energy for the body. It is a light meal; an item of food eaten between meals, as a' refreshment'. Snacks are important to the people, who do not eat enough at one meal, so they tend to get hungry between meals and have to take snacks of some type.
For some people three square meals works fine but some have

There are Manchurian balls, Koftas, Muthiya, Bondas
and Falafel.
Falafel are small, round balls of Chickpeas that are ground and made into balls that are fried and eaten with Pita bread.

### VANILLA POD AND THE VANILLA ESSENCE..####

Vanilla is the most popular flavoring agent that is derived
from orchids of the ‘genus Vanilla’  native.
Vanilla is the second most expensive spice after saffron.
Vanilla grows as a vine that climbs  up any existing tree, pole,
or any  other support.
These are a variety of vanilla from where it is produced.
Bourbon vanilla the Bourbon-Madagascar vanilla, West Indian vanilla, Mexican vanilla and the French vanilla.

Vanilla flavoring in food is done by adding the vanilla extract
or by cooking vanilla pods in the liquid preparation.
A stronger aroma is got when the pods are split in two and is added to the liquid.
The natural vanilla gives a brown or yellow color to the preparations. A major use of vanilla is done to flavoring the
ice creams. Vanilla is used by home bakers. .
Pure vanilla has a wonderful aromatic flavor and it is used
in flavoring pastries, confections and other desserts.

Vanilla extract is made from vanilla beans that have been steeped in alcohol. It is a clear dark liquid with a rich flavor
and is highly aromatic.Vanilla essence is got by extracting  ‘oleoresin’ from the vanilla beans.
It's widely used throughout the world to flavor desserts,
baked goods, ice cream, beverages, and custards, but some
chefs use it as a secret ingredient in savory dishes as well.

##### useful tips #####

REMEMBER WHEN BUYING....

Grapes do not  ripen, once they have been picked. So buy grapes that are firmly attached, plump, bright and those looking fresh. Do not buy the soft or wrinkled grapes.

Select Pomegranates by weight and not by color.  Check the outside of a ripe pomegranate, it should be from pink to a deep ruby red. Keep in mind that the heavier the pomegranates the better it is.

Slightly green papayas will ripen quickly at room temperature, if wrapped in newspaper. So buy Papayas that are partly or completely yellow in color.

Now in mango season never buy completely green mangoes, as they may never ripen, but choose firm plump mangoes.

A' karahi'  or' kadhai'  is the Indian version of a Wok. It is a round deep pan made of heavy metal, with handles on both sides. The round Kadhai is used for sautéing,  stir  frying and cooking curries. The kadhai subzi | gravy when  served in a kadhai  on the table gives  an authentic Indian look and feel.
So dishes like Kadhai Chicken, Kadhai Paneer and so on, which are prepared and served in this wok like pan get it name.

##### The Cooking tools used in Indian cooking and cuisines.#####

Degchi
The' Degchi'  is one of the most common utensil's used in Indian cooking. It is a round, deep, broad-rimmed pan used for cooking daals (lentils), kheer (rice pudding) and other dishes with a liquid base.

Handi/ Haandi
A 'Haandi'  is traditionally a circular clay pot with a fairly thick bottom earlier heated over coals and used with a lid. They are the most beautiful cooking pans and come in a range of sizes.
A Handi is made of heavy material and also thick bottom. So that food does  not stick to the bottom and rather be slow cooked in it without burning the food.
Dum cooking
Par-cooked food is kept in Handi with minimal amount of water. The lid is placed and sealed with a paste of flour and water. The flames are put out, leaving a bed of hot coals. So that the heat creates the steam and the food can be cooked.
Handi is the cookware used for Dum cooking. ‘Dum’ cooking   means  to cook  food 'air-cooked' or 'baked', So the Handi is left on the charcoal for several hours, till the food is to be served. The heat creates the steam and the food gets ready to eat.

Food and diet can be categorized into three groups: Satvic, Rajasic or Tamasic  according to
its character and its effect upon the body and the mind. One can find out the nature or
temperament of a man from the nature of the food he prefers.
In Ayurveda, sattva, rajas and tamas known as gunas are the three fundamental attributes
