The Indian gravies, few simple methods . . .

 
The Indian gravies have certain ingredients in common, so preparing and storing one basic could be a great idea. For a basic recipe, all one would need to do. Grind the onion and tomato in a mixer grinder to get a smooth paste.
Heat a pan and add some oil, the paste n stir for 5 minutes.
Add the ginger and garlic pastes and fry for few minutes.
Now add the red chilly powder, cumin powder, turmeric powder, garam masala, salt, coriander powder, cook until oil appears or leaves the sides of the pan.
A BASIC WHITE GRAVY CAN BE OBTAINED
BY BOILING CASHEWNUTS, MUSKMELON SEEDS, IN WATER. IN THIS COULD ADD POPPY SEEDS, ALMONDS AND TEJ PATTA ALSO. BOIL FOR 10 MINUTES AND THEN WHEN COOL, GRIND ALONG WITH ONION, GARLIC TO A FINE PASTE. COOK THIS IN A PAN WITH OIL UNTIL IT LEAVES THE SIDES OR OIL APPEARS.
ANOTHER INTERESTING COCONUT GRAVY:
NEED TO GRIND TO A FINE PASTE. TAKE DESSICATED COCONUT, ADD CUMIN SEEDS, GREEN CHILLIES, A PIECE OF GINGER, ONION, CURD, FEW GARLIC CLOVES, LITTLE RAW RICE. USE WATER AND GRIND TO A VERY FINE PASTE. THEN COOK IN OIL UNTIL LEAVES THE SIDES OF THE PAN. IN THIS ADD BOILED VEGETABLES LIKE POTATO, CARROT, BEANS, PUMPKIN AND DRUMSTICKS.
THE RED GRAVY COULD BE OBTAINED
BY BLANCHING THE TOMATOES (MAKE A PUREE), THEN COOKING. THE TOMATO PUREE WITH THE WHITE GRAVY AND ADDING MASALAS LIKE RED CHILLY POWDER, TURMERIC POWDER, GARAM MASALA, CORIANDER POWDER, ALSO ADD SALT AND KASURI METHI AND CREAM. WHEN THE GRAVY IS READY ADD CUT BOILED VEGETABLES LIKE CAULIFLOWER, BEANS, CORN, BABYCORN, CARROTS AND PIECES OF PANEER WOULD GO WELL IN THIS GRAVY..
ANOTHER OPTION IS THE STUFFED POTATOES:
Cut the boiled potatoes into half and scoop them. Mix the scooped potatoes, paneer, cheese, salt and pepper pd to taste. Fill the potatoes with the filling..

THE GREEN GRAVY COULD BE MADE . . .
FROM SPINACH LEAVES, METHI , CORIANDER LEAVES AND THE MINT LEAVES. BUT THE MOST POPULAR ONE IS USING THE SPINACH (PALAK ) LEAVES. THE SPINACH LEAVES ARE WASHED AND BLANCHED IN HOT WATER THEN GROUND TO A PASTE WITH ONION, GREEN CHILLY, GINGER, GARLIC, TOMATO, MASALAS THEN COOKED IN A PAN UNTIL OIL APPEARS OR LEAVES THE SIDES OF THE PAN.
IN THIS GRAVY IF PIECES OF PANEER ARE ADDED IT BECOMES" PALAK PANEER" AND IF BOILED CORN IS ADDED THEN "CORN PALAK". EVEN ADDING BOILED ALOO, CUT INTO PIECES OR BOILED VEGETABLES WILL GO WELL..
THE BROWN GRAVY CAN BE MADE . . .
BY FRYING SLICED ONIONS UNTIL BROWN THEN WITH CURD MADE INTO A PASTE. COOK THE BROWN PASTE AND LITTLE WHITE PASTE UNTIL LEAVES THE SIDES OF THE PAN. IN THIS GRAVY ADD SANDWICH PANEER PIECES TO SERVE IN A RICH WAY.
THE LAST GRAVY, THE JAIN GRAVY COULD BE . . .
MADE BY BOILING CASHEWNUTS, PUMPKIN SEEDS IN WATER WITH A TEJ PATTA THEN GRIND TO A FINE PASTE. COOK THIS WITH SOME KHADA MASALAS AND OTHER REGULAR MASALAS. ALSO ADD CREAM AT THE END.

Dips and appetizers are all time favorite party food.
They are the most popular appetizer to serve, they are so popular because they taste so good. They are easy to make, delicious and flavorful, and can be served with a huge variety of dippers. What to serve with the dips? Party dips, go well with tooth pick starters and also with Breadsticks, Potato chips, Taco chips, Bruschetta, Crackers, Carrots and Cucumber sticks and Bell pepper strips. Other dips usually are served with simpler dippers like Crackers, flavored Tortilla chips, or the Nacho chips.
Hummus is a dip/spread that is made from chickpeas. In fact, hummus is the Arabic word for chickpeas. It is flavorful middle-eastern dip that is served with fresh vegetables or crisp crackers and pita bread.
The hummus taste varies, Some hummus have a strong lemon flavor, some have an overwhelming garlic flavor, and some hummus has a spicy tone.
A simple recipe of hummus : Hummus: right bottom . . .
Ings : Chickpeas, boiled and drained, lemon juice, Tahini (sesame seed paste), make this by grinding sesame seeds with oil. Cloves of garlic cut, Salt and white pepper.
METHOD: Grind the chickpeas and mix with lemon juice, tahini, garlic, pepper powder and salt. Remember to drizzle Olive oil and sprinkle red chilly powder. Serve with pita crisps, crisp crackers or French bread slices.
Make a creamy dip : top left . ..
Allow cheese to get to room temperature, add milk and salt. Beat until smooth, for 4 minutes. Now add onion.
For a Mayonnaise Dip take… bottom left . . .
Need garlic, olive oil, green onion that are finely chopped, mix mayonnaise.

For a Nachos, the dip will need chopped onion, chopped garlic, tomatoes peeled and chopped, chilly powder, hot sauce, grated cheddar cheese, oil, capsicum ( roasted ), corn flour.
Method : Put a pan to heat, add oil, cook onion, garlic, tomatoes, capsicum, chilly powder and hot pepper sauce. Mix cornstarch, mixed in cold water; stir all. Lastly add cheese.. Serve with nacho chips..

MAKE THE UNUSUAL 'PANI PURI' DIP :
MIX THICK CURD, SOME MINT PASTE , GINGER PASTE , GREEN CHILLY PASTE, PANI PURI READY MASALA , ALSO ADD SALT, SUGAR . CHECK THE SALT. IF NEEDED THEN ONLY ADD SOME CHAAT MASALA OR CUMIN POWDER OR BLACK ROCK SALT.

MAKE A TASTY CORN DIP : MIX THICK CURD, BOILED N CRUSHED CORN, FINELY CUT ONION, FINELY CUT TOMATO, GREEN CHILLY, SALT, RED CHILLY ,POWDER, SUGAR N CUMIN POWDER.

RECIPE ONE
INGS :
3\4 Cup Bengal gram flour,
1-2 Tbsp Onion and Potato,
2 Tbsp Carrot and Corn (grated),
1 Tbsp Paneer (grated),
1\8 Tsp Turmeric pd and Coriander pd,
1\2 Tsp Red Chilly pd, A Pinch Soda bi carb,
Salt to taste and 1 Tbsp Hot Oil.
METHOD:
Make a batter of the above listed. Put oil to fry to heat
and drop 15- 20 small pakoras, when golden brown, take them out and put on kitchen tissue.
TIP: Add little rice flour to get more crisp pakoras.

250 GMS BHINDI (CLEANED AND CUT INTO ONE INCH PIECES),
SPRINKLE SOME SALT AND RED CHILLY PD ON THE CUT BHINDI. PUT A PAN TO HEAT, ADD OIL, CUMIN SEEDS, HING, THE BHINDIS. STIR , SPRINKLE SOME WATER AND ON SLOW FLAME ALLOW TO COOK UNTIL SOFT. KEEP ASIDE. NOW IN THIS PAN PUT ONE TSP OIL ADD CUMIN SEEDS, 1\2 TSP URAD DAL, ONE WHOLE RED CHILLY, CUT ONION AND SAUTE.
MAKE A PASTE OF 2-3 TBSP GRATED COCONUT,  4-5 PIECES CASHEW NUTS, ONE CUT GREEN CHILLY, 2-3 CLOVES OF GARLIC, USE SOME WATER.
GRIND TO A FINE PASTE. ADD THE PASTE TO THE PAN AND ALSO ADD TWO CHOPPED TOMATOES. COVER AND COOK FOR FEW MINUTES. NOW ADD SALT, 2-3 TBSP CURD, SOME RED CHILLY PD AND LITTLE TURMERIC PD, MIX WELL LASTLY ADD THE COOKED BHINDI AND SERVE HOT.

Check a pickle recipe.. Gherkins, Tendlis or the Tindora. . .

Gherkins also locally known as the Tendlis or the Tindora.
Gherkins is the small variety of cucumber, or a young green cucumber used for pickling. The gherkin is a fruit similar in form and nutritional value to a cucumber.
Gherkins are small green cucumbers that have been preserved in vinegar. Gherkins and cucumbers belong to the same species.
Pickled gherkins are served to accompany other foods, often in sandwiches. The gherkins, also called tendlis can be made into a simple subzi or make a typical Goan pickle, which is very tasty.




Check a pickle recipe..
20 Tendlis (gherkins),
1 tps salt.
MAKE A PICKLE MIX..
10 - 12 Use kashmiri chillies,
10 cloves of garlic,
A small piece of ginger,
1/8 tsp fenugreek seeds,
5 tbsp vinegar,
1/2 tbsp turmeric,
2 tbsp sugar,
1 tsp dry mango powder ( amchur )
MAKE A TEMPERING :
4-5 tbsp oil,
1 tsp mustard seeds
Method:
Wash and wipe gherkins, make a slit along length of each.
Slice gherkins into vertical fours.
Place all gherkins, sprinkle salt on them.
Keep aside and leave it for an hour.
Drain the water. In a mixer jar grind all the spices using vinegar, to a fine paste. Heat oil in a pan add the mustard seeds then add the spice paste and fry the spice paste over low heat for a minute. See the spice mixture does not burn. Stir in sugar and add the tendlis, cook till just tender. Store in a glass jar..

Mahatma Gandhi led at least 100,000 people on the "Dandi March" or "Salt Satyagraha", in which protesters made their own salt from the sea, which was illegal under British rule, as it avoided paying the "salt tax".
Salt for human consumption is produced in different forms: unrefined salt (such as sea salt), refined salt (table salt), and iodized salt. The completely raw sea salt is bitter because of magnesium and calcium compounds, and thus is rarely eaten.
Unrefined sea salts are also commonly used as ingredients in bathing additives and cosmetic products.
After the raw salt is obtained, it is refined to purify it and improve its storage and handling characteristics. Purification usually involves recrystallization. Table salt is refined salt, which contains about 97% to 99% sodium chloride.
Iodine-containing compounds are added to table salt. Iodine deficiency affects about two billion people and is the leading preventable cause of mental retardation.  The practice began in 1924.
Iodized salt is thus table salt mixed with a minute amount of potassium iodide, sodium iodide, or sodium iodate. Iodized salt is used to help reduce the incidence of iodine deficiency in humans.
Iodine deficiency commonly leads to thyroid gland problems, specifically endemic goiter, a disease characterized by a swelling of the thyroid gland.
In Western cuisines, salt is used in cooking, and also made available to diners in salt shakers on the table. So Table salt is refined salt. For 4,000 years, we have known that salt intakes can affect blood pressure through signals to the muscles of blood vessels trying to maintain blood pressure.
Many chefs prefer kosher salt in cooking certain dishes, usually as a topping, to add special crunch or taste to food. Kosher salt is made by similar evaporation processes as cubic table salt, both plain and iodized.  This condiment is used in India and is used extensively in Indian cuisine during fasting days.
Rock salt is used as a condiment or added to chaats, chutneys, raitas.
Store salt in an air tight container. Salt is salt. So long as it contains sodium (and all forms of table salt do), then it will raise your blood pressure and could damage your body. So people need to be careful when using  salt. 
Sea salt is evaporated sea water. All salts are nutritionally the same. Black salt named Kala Namak in India, is really a blend of minerals having  a strong sulfur odor.  It is commonly used in snack foods in North India. Kosher salt is an additive free coarsely grained salt.

Almost all foods contain some sodium naturally. Dairy products, meats and fish are generally higher in natural sodium than fruits, vegetables and grains.
Most of the sodium we consume comes from the added salt. The salt we add in cooking and at the table, and salt that is added to processed foods. Sodium also occurs in several commonly used food ingredients, such as baking soda, baking powder and soya sauce, as well as in many food additives and preservatives such as sodium nitrate.

100 GRAMS CONDENSED MILK,
2 TBSP SALAD OIL OR OLIVE OIL,
2 TBSP WHITE VINEGAR OR LIME JUICE,
1\4 TSP SALT,
1\2 TSP MUSTARD POWDER,
1\4 TSP PEPPER POWDER.
METHOD
BLEND ALL WELL TOGETHER, BEAT WELL, THEN STORE IN FRIDGE.
RECIPE TWO
Make tasty homemade mayonnaise. The recipe does not use any eggs..
Take 1\4 cup fresh cream, 1 tsp mustard powder, 1\4 tsp salt, 1 tbsp sugar, 1\4 tsp pepper powder, 2 tsp vinegar and 3 tbsp oil.
Tip: For extra flavor, try using olive oil in place of vegetable oil.
Blend together the fresh cream, sugar, oil, vinegar, mustard, salt and pepper powder in a bowl filled with ice.
Taste the mayonnaise, and adjust the seasoning and vinegar to taste.
Store the homemade mayonnaise in a jar or plastic container in the refrigerator.

350 g Fine flour
5 tablespoons yogurt
5 tablespoons warm water
½ teaspoon active dry yeast
½ teaspoon salt
pinch of sugar
ghee or butter to apply.
METHOD..
Add warm water, sugar and yeast. Mix well until the yeast dissolves. Mix flour and salt in a bowl. Make a well in the center.
Add yeast mixture and yogurt and make into soft dough using water. Apply oil on the dough leave it covered with a cloth for at least 3 hours. Divide the dough making balls, about 4-6 pieces. Roll into 6-8 inch ovals shape.
Cook for three minutes on each side under a preheated griddle,
until brown spots appears. Serve hot with ghee or butter.

WHAT ONE CAN DO WITH LEFTOVER SUGAR SYRUP

 
Gulab jamun is a popular dessert in countries of the Indian Subcontinent such as India, Pakistan, Sri Lanka, Nepal and Bangladesh. It is made of a dough consisting mainly of milk solids, traditionally, khoya, an Indian milk product (buffalo milk,) then rolled into a ball together with some flour and then deep fried. It is then put into in a sugar syrup flavored with cardamom seeds and rosewater, kewra or saffron.

Method: cut bread into 3 inches length strips. Fry them in the ghee
or oil. In another pan heat left over sugar syrup with some water. Bring it to a boil and switch off. Now put the fried bread in that and serve hot. Your bread gulab jamun is ready.

(if not refrigerated). Alwaysb use a dry spoon.
(Grated raw mango can also be used instead of gooseberies.)

Most fruits are highly perishable. Purchase well-colored apples that are firm, with a fresh smell. Skins should be smooth. Store apples in a cool, dark place.
Or put place the apples in a plastic bag and store in the crisper drawer of your refrigerator. 

Select bananas that are bright in color, full and plump. You can speed up the ripening process by placing the bananas in an open paper bag on the counter.
Select fruits that are mostly yellow in case of Papaya. Ripe papayas should be refrigerated to slow down the ripening process. If a ripe papaya is kept in a plastic bag in the refrigerator, and it should last about a week.

Sprouting is the practice of germinating seeds to be eaten either raw or cooked. The germination process that lasts few days, can be done at home manually. The seeds are normally first soaked, before soaking, the seeds are rinsed to remove soil and dirt. The soaking increases the water content in the seeds and brings them out of quiescence. Then draining and then rinsing seeds at regular intervals until they germinate, or sprout. The growth process of any sprout can be slowed or halted by refrigerating until needed.
Common seeds for sprouting include alfalfa, fenugreek, lentils, peas, etc. The Mung beans have been sprouted in Asia for thousands of years.
Choose seeds to be sprouted. Put the seeds| pulses in warm water to soak, 8 to 10 hours. Now rinse the pulses| seeds. 
Drain the water, put them in a muslin cloth and tie it tightly. Place it in a jar or a vessel in a warm, dark place. Cover with a lid. Check if the sprouts have attained desired length, or else sprinkle some water again continue to sprout.
When sprouted well then store unused sprouts in the refrigerator.
Sprouts are said to be rich in digestible energy, vitamins, minerals, amino acids, proteins, these nutrients are essential for human health.

Have you ever heard of a soup against cancer? Tarhana, it is . . .


Tarhana (Turkish), trahanas (Greek) are names for a dried food based on a fermented mixture of grain and yoghurt or fermented milk, usually made into a thick soup with water, stock, or milk.
Tarhana is made by mixing flour, yoghurt or sour milk, and optionally cooked vegetables, salt, and spices , letting the mixture ferment, then drying, and usually grinding and sieving the result. Tarhana are cooked as a thick soup by adding them to stock, water, or milk and simmering. This soup is rich in vitamin A, B1, B2 and lycopene.
Tarhana is a traditional dish in Turkish cuisine refers to a dough or powder made using various vegetables, spices, yeast, and yogurt.

Ismail Çelik, the head of Department of Preventive Oncology of Hacettepe University, pointed out the importance of diet to protect our body against cancer. The professor advised people to eat what they learnt from their grandmothers, not from TV programs.
Tarhana soup is a traditional soup... 
Make the tarhana soup : Need
1/2 cup tarhana, 1 tablespoon olive oil, 
4 cups water, tomato paste,1 tsp red pepper puree, butter, grated  cheese.
Soak the tarhana  in  warm water for at 
least 15 minutes.
Put to heat the soaked tarhana and olive oil
to a boil. Stir  for 15  minutes.  Add a little tomato paste, pepper puree  and salt to taste. Serve with grated cheese and some butter.
Also serve with bread croutons.
Things are much easier now as you can buy the Tarhana mix from Mediterranean grocery store.

Tip to get best ‘ hummus’, if one soaks the chickpeas

overnight with baking soda to soften them.
Tip two make your own tahini paste, in a food processor 

or blender by grinding toasted sesame seeds.
Toast the sesame seeds in a pan over medium heat until 
golden brown, allow to cool, then grind.
RECIPE ONE :
Ingredients 1 clove garlic [cook with chickpeas], 

1 cup Chickpeas , half the liquid reserved,
4 tbsp lemon juice, 2 tbsps tahini, 1 clove garlic, chopped,
1 teaspoon salt, black pepper to taste, 2 tablespoons olive oil.
Method :
Boil the chickpeas with garlic, until soft.
In a mixer jar add chopped garlic, chickpeas ,

lemon juice, tahini, and salt in blender. Blend until creamy
and well mixed. Transfer the mixture to a medium serving bowl. Sprinkle with pepper and pour olive oil over the top.
Recipe Two for making the hummus...
1 cup dried chickpeas, 1 tsp baking soda, 3-4 large garlic cloves, unpeeled, 1\8 cup olive oil , 1/8 teaspoon ground cumin, 1\8 cup tahini, ,4-5 tablespoon fresh lemon juice, Salt , Paprik to sprinkle, 4 tbsp chopped parsley, Pita bread, for serving.
Soak the dried chickpeas in water and stir in the baking soda, keep overnight.
Drain the water and cook the chickpeas, also add the garlic cloves and bring to a boil. Simmer over moderately low heat until the chickpeas are tender, about 40 minutes.
Keep little water, puree the chickpeas with 1/2 cup of the reserved cooking water, 1/4 cup of the olive oil and 4 cloves of garlic. Add the cumin along with 1/8 cup of the tahini and lemon juice and grind until creamy. Season the hummus with salt. Sprinkle the hummus with the cumin and paprika. Also drizzle olive oil on top.

You need a paste called Tahini.. which is generally difficult

2 get in India. So you can make it.
Grind 1 cup of Seasme seeds with 1/4 cup Vegetable Oil

till its a smooth paste.
Next, also grind separately 1 cup boiled Chana/Chick peas,

a few cloves of garlic, 1 Tbsp of Tahini paste (recipe above),
a squeeze of Lemon and Salt to taste.
Grind till smooth and no lumps. Serve with Pita bread, fresh mint leaves, onions, tomatoes and pickled cumbers and chillies.

What sets green tea apart is the way it is processed.

Homemade Sev . ..

 
Sev is made from Bengal gram flour which is mixed with spices and seasonings. Also mix Salt, spices and lime juice to give sev a tangy flavor and make a dough. This dough is put into the sev making machine. From the machine drop the thin strands of dough, which are then deep fried.
Make tasty Sev at home.
ings:
2 cups Bengal gram flour ( Besan ),
1 tomato puree, blanched, grind in the mixer and strain it.
Also add salt, red chilly powder, pepper powder and a pinch of soda.
method:
Mix all the above ingredients to make a dough, using the tomato puree. Grease your hands and grease the inner side of the sev making machine. Put a long piece of the dough into the greased machine. Move your hands in circular motion to make rings of sev.
Cook for about a minute or two. Allow to fry in oil.
Keep flipping the sev rings till they are yellowish brown.
When Sev is ready. Store in a container.

A Crunchy Party Starter . .Papad Spring Roll


Papad Spring Roll
( a Crunchy Starter ) ( Serves 4 )
Ing:

8 nos urad dal papad
( small size, garlic flavor )
1tbsp oil, 1\4 tsp sugar
2 small size potatoes
( boiled n broken into pieces)
1 cut onion, 1\4 tsp pepper pd
2 tbsp grated paneer n carrot
1tbsp cut capsicum, 1\4 tsp chaat masala
1tbsp boiled corn, 1\4 tsp red chilly pd
Salt to taste
Method :Put a pan to heat , add oil in that add the onion
Cook for few seconds, then add capsicum, carrot and
corn, stir now add chilly pd, chaat masala, sugar, pepper pd
And salt.Take off the heat then add the paneer.
From this mixture, make 8 pieces of cutlet shaped roll to put inside the papad to get papad spring roll. 

(1 to 1 1\2 inch in size ).
Take some water in a plate, dip one papad at a time, take it
Out and put on a kitchen cloth, dab it gently.
Now the papad is very soft this will unable us to make the rolls.
On each papad place one cutlet n roll it n close the edges, seal
the sides firmly . Fry in hot oil n serve hot with tomato sauce.

ings :
5-6 slices cut from a french loaf,
2 tbsp grated cheese,
2 tbsp cut onion,
2 tbsp cut capsicum,
2 tbsp boiled sweetcorn
1 tbsp black olives cut into pieces,
1\2 tsp chilly flakes,
1\2 tsp oregano,
1 tbsp butter to apply,
salt to taste..
method :
Pre heat the oven to 180 degrees centigrade for 10 minutes.
Apply butter on one side of the cut slices of the french bread.
The buttered side is the bottom side and on the above side spread the mixture of the cut vegetables, cheese , chilly flakes, oregano and salt. Put in hot oven the bread slices until crisp.

Serve with tasty salsa type dip..

3\4 cup Tomato sauce,
2 Tbsp Butter,
1 Onion cut finely,
1 Tbsp cut Garlic,
2 Tbsp Capsicum cut finely,
1 Tbsp Sugar,
Salt n Pepper powder to taste.
Blanch the tomatoes n grind in a mixer jar.
Put a pan to heat add butter, add garlic n saute for few seconds.
Now add cut capsicum, onion, stir for few minutes.

Also add tomato puree n tomato sauce.
In this add salt, pepper powder n sugar, cook on low heat 

until thickens. Serve as a dip..

Frozen, cut mixed fruit, n other ingredients would make a frozen smoothie.

4 Round slices of Pineapple,
1 Apple cut into pieces,
1 Banana cut into pieces,
5 Strawberries cut into pieces,
1\4 Cup Watermelon cut into pieces,
1 Fig cut into pieces,
2 Dates cut into pieces,
2 Tbsp Kiwi crush,
1 Cup Orange juice,
Sugar, Ice, if needed.
Method : Cut all the fruits, dates and fig.
Pour the kiwi crush on it. Put all in the freezer
section of the fridge to chill.
When to serve, put all fruits and the orange juice
in a mixer jar, grind to a thick shake or thick juice.
Serve chilled. Add sugar and ice if needed, while
grinding..

In a mixer jar pour the khus or kiwi crush,
lemon flavored soft drink, ice cream and
the crushed ice.
Quickly churn 4 few minutes.
Pour in a tall glass or a goblet.

A SIMPLE PARTY DESSERT..Strawberries dipped in chocolate.

 
A SIMPLE PARTY DESSERT...
Do u all like strawberries dipped in chocolate?
This is so much fun! It will remind you of decorating cookies n cakes.  These are great!! Very easy!! Must try 4 all, this strawberry season. These are excellent, easy and an elegant dessert, 4 which all will say  " FANTASTIC" . . . 
A simple way 2 get 2 these . . .
Wash the strawberries in running water. Put them on a clean kitchen towel to dry completely before you start dipping them in chocolate. One will need chocolate of one's choice whether it is dark, milk, or white chocolate.
Few tips 4 making chocolate dipped strawberries...
If it is a chocolate bar, cut into pieces n do in double boiler or in microwave. Melt the chocolates in a microwave at half power, for 1 minute. Remember just 2 melt the chocolate, not bring it to a boil.
If you are using chocolate chips, then a stir is important while melting it.
If have problem to hold the strawberry, then put on a tooth pick or a skewer. Keep all ready before you start to dip the strawberries, like finely cut nuts or coconut or any other fancy sprinklers.
After tempering the chocolate should look shiny.
Plan whether you wish to dip the whole strawberry or would like to cover 2\3 portion. Then coat the strawberry in your toppings.
While dipping the strawberry in chocolate hold it by its leaves.
Place the dipped strawberry onto a wax paper n in the fridge section.
Until the chocolate coating has hardened, the berries will come off the paper. They will not keep more than a day. Need to be stored in the refrigerator.
A SIMPLE RECIPE
Ingredients: Dark| Semi sweet| Milk chocolate, chopped,
White chocolate, chopped,
Strawberries with stems, washed and dried well.
Method: Melt the chocolate n Stir until smooth.
When the chocolates are melted and smooth, remove from the heat.
Hold the strawberry by the stem, dip the berry into the dark chocolate or any other of your choice. Twirl it around to get it completely coated.
Line a waxed paper on a tray. Roll in nuts, coconut or using a fork, dipped in melted white chocolate make a design| pattern by drizzling. Put the coated strawberries in the fridge section to set, but remember to use within 24 hours.
After dipping your strawberries be sure to put them in the refrigerator not the freezer section..

CRISPY ONION RINGS
ING:
one Onion,
2 tbsp Rice flour
2 tbsp Maida,
1 tsp Besan (Benegal gram flour),
Few pinch of Soda bi carb,
Red chilly powder, Little Pepper powder, Salt to taste,
Oil to fry.
METHOD:
Take a big size onion, peel and cut round slices ( roundals).
(thick slices, separate each ring).
Put oil to heat , make a batter of rice flour, maida, besan,
soda bi carb, red chilly pd, pepper pd, salt to taste.
Use water to make a flowing batter, dip each onion rings in the batter so that it coats all well.
Put one by one in oil to fry, remove when golden on a paper napkin. Serve with some chaat masala sprinkled on top. Serve with green chutney and tomato sauce.
TIP: Add rice flour to get crispy onion rings.

Strawberry Delight
Strawberry puree
1\4 cup strawberry puree,
1\2 cup Ice cream soda,
1 Small scope Vanilla Ice cream,
4- 5 cubes Ice.
Need to make strawberries puree..
5 strawberries, washed n cut,
1 tbsp Mixed fruit jam| Strawberry jam,
1 tsp Sugar, opt,
1-2 tbsp Strawberry Crush.
In a mixer grinder add all to get a strawberry puree.
Keep this in the fridge to chill.
When to serve
In a mixer jar, add the strawberry puree, ice, soda
ice cream. Churn for few minutes. Serve chilled.

Ings:
Small size papad (cut into half) ,
Boiled potato cut into small pieces,
Boiled and salted sprouts or red channa or chola,
1 onion cut finely,
1\2 tomato cut into small pieces,
1 green chilly cut into pieces,
1\4 tsp red chilly pd,
1\4 tsp chaat masala,
1\4 tsp sugar (powdered)
Salt to taste
Few drops of lime juice.
METHOD:
Mix all ingredients except the papad.
Roast the half cut papad, one by one and immediately
give shape of a cone.
Fill the above chaat mixture in the cone shaped papad
and garnish with coriander leaves n anaar dhana.

The ‘chutney pitto/chutney podi/chutney powder’ are easy 2 use plus add lots of flavor. Podis, means powder or spice mix in plain English.
The chutney powder with coconut is very popular among Konkanis. It can be either with or without garlic.
There are special spice powdesr used in most of the Udupi gravies , sambars n Rasams. These are available as sambar powder, the rasam powder.

Make quick cheesy garlic bread by mixing butter, grated Parmesan cheese, olive oil, and little garlic powder. Spread on cut pieces of French bread; put in hot oven for few minutes until golden brown.

Recipe two ... Party foods..

 
Roasted Corn Satey lolli pops..
Ings :
For Corn Satey Roll..
10 satey sticks,
one sweetcorn roasted,
2 boiled and grated potatoes,
1 green chilly cut,
1 tbsp cut coriander leaves,
2 tbsp grated paneer,
1\4 tsp red chilly powder,
1\2 tsp lime juice,
1\2 tsp powdered sugar,
1\4 tsp chaat masala,
oil to fry.
roll in crumbs..
1\2 cup bread crumbs,
some salt and red chilly powder to taste.
For the paste
1\4 cup maida ( fine flour ),
1 tbsp corn flour,
1 tsp cream,
salt to taste .
Method :
Roast a corn on gas flame, allow to cool.
Remove all corn kernels.
In a bowl take grated potatoes, add the grated paneer.
Also add cut green chilly and coriander leaves.
Now add the coarsely ground roasted corn, add
red chilly powder, chaat masala, salt, sugar and lime
juice. Mix well.
Take 'satey stick' covering half of the stick, put the
above mixture looking like the sheek kabab.
Make a paste of maida, corn flour, salt and cream, use water as needed. In the bread crumbs add the salt and red chilly powder.
Make all corn satey lollipops, first dip in maida batter then in bread crumbs. Put oil to heat and fry the corn satey lolli pops until golden brown.. Serve with a dip in single serving glass..

MAKES 6 PIECES
INGS:
2 Boiled and Grated Potatoes,
6 Small, Cut pieces of Cheese, 1 Tbsp Butter,
2 Tbsp Grated Cheese, 4 Slices of bread made
into Crumbs, 4 Tbsp Fine Flour ( Maida ),
Salt and Pepper pd to taste, Oil to fry..
METHOD:
Grate together the potatoes and cheese.
Mix into this half the bread crumbs and also the butter.
Add salt and pepper pd to taste and make 6 balls ,in
the center put a small piece of cheese and seal well.
Make a paste of fine flour using water and dip each ball
then coat in the remaining bread crumbs. Fry in hot oil,
serve hot with tomato sauce.

Quick Mushrooms n Mix Vegetable Subzi
INGS
1 Cup Boiled Vegetables,
[ like Potato, Carrot, Beans, Cauliflower,Babycorn ],
10 Mushrooms, cut into half,
1 Tbsp Oil,
Salt and Sugar to taste,
1 Tbsp Cream for garnish,
1 Tbsp Coriander leaves for garnish.
Make a paste
1 Onion cut into pieces,
1 Tomato cut into pieces,
1\4 Cup Curd,
1-2 Green Chilly,
A piece of Ginger,
1 Tbsp Ginger n Garlic paste,
1 Tbsp Grated Coconut,
3\4 Tsp Red chilly powder,
1\4 Tsp Turmeric powder,
1\2 Tsp Coriander powder,
1\4 Tsp Cumin seeds.
Method
Boil the vegetables in water with little salt added.
Except the mushrooms.
Drain the vegetables and keep aside.
In a mixer jar grind all ingredients and make a paste.
Put a pan to heat, add oil, then add the paste, stir.
Cook until oil appears, now add the boiled vegetables,
salt, sugar to taste. If the gravy seems thick, add some
water. Also add the mushroom pieces.
Cover and cook for few minutes. Serve hot with a garnish
of coriander leaves n cream.

Gulkand in Hindi: गुलक़न्द

"Gulkand Mukhwas" is usually eaten after a meal to aid digestion and freshen
the mouth. 
Gulkand in Hindi: गुलक़न्द is a sweet preserve of rose petals from Pakistan and North India. Gul means flower in both Persian and Urdu whereas qand means sweet in Arabic..
 Gulkand is an Ayurvedic tonic. Gulkand is commonly used as an ingredient in Paan.
  A simple gulkand recipe would need equal amount of bright red colored rose petals n sugar, wash n clean the rose petals. Mix rose petals n sugar, add few drops of rose essence. Keep in sun in a glass jar. A healthy homemade gulkand will be ready.

Crunchy Chinese Bhel
Chinese Bhel is a delicious snack that is wholesome
enough to be eaten as a meal.
Ingredients
1 1\2 cup Noodles boiled n fried,
1 Onion finely chopped,
4 tbsp cabbage shredded,
2 tbsp capsicum cut in thin slices,
1 carrot cut in thin slices,
2 tbsp cornflour,
1 tbsp soy sauce,
1 tbsp red chilly sauce | schezuan sauce,
1 tsp sugar,
1 tsp Ginger Garlic Paste,
1 tsp Black pepper powder,
salt to taste,
2 tbsp Roasted Peanuts, coarsely ground,
Few spoons cut spring onions 4 garnish,
2 tbsp Oil,
Oil to deep fry.
METHOD:
Boil noodles in hot water add little oil n some salt. When done,
drain the water. Allow to cool then sprinkle cornflour on noodles and mix well. Put oil to heat to fry the noodles. Fry until golden brown in color. Put a pan, add oil and saute the onion, carrot, capsicum, also add ginger | garlic paste and stir for few minutes, take off the heat.
In a bowl mix salt, black pepper powder, sugar, chilly sauce and soy sauce. Now in a bigger bowl mix the bhel for that take the fried noodles, the vegetables, also add cabbage and mix well. Now add the sauces mixture. Garnish on top with green spring onions.

Marinara (mariner's) sauce is a southern Italian tomato sauce usually made with tomatoes, garlic, herbs (such as basil), and onion. There are many variations. Some of these include the addition of capers, olives, anchovies, and/or spices.
This sauce to add flavor to pasta, rice, seafood and pizza.
There are at least two folk theories as to the origin of this sauce:
One says cooks aboard Neapolitan ships invented marinara sauce in the mid-16th century. Another theory states this was a sauce prepared by the wives of Neapolitan sailors upon their return from sea.
Marinara sauce is an Italian-American term for a simple tomato sauce with herbs mostly parsley and basil.
Is there any difference between marinara sauce and pomodoro sauce?
Lots of Italians consider the two sauces the same thing.
Marinara sauce is a tomato sauce made with fresh tomatoes, olive oil, garlic and fresh basil and salt, but it simmers for only about 20 minutes.
So its texture is liquid type with chunks of tomatoes.
Since it simmers for a short period of time it retains it's bright red/orange color. While some of the olive oil blends with the tomatoes, some of it does not.
A pomodoro sauce, is a lot like the marinara sauce as it's thicker but still liquid consistency. It feels a lot like minced tomatoes in your mouth rather than the chunks you feel in marinara sauce as it's cooked for a longer time n it's darker in color.

Pasta Pomodoro is an Italian food typically prepared with pasta, olive oil, fresh tomatoes, basil, and other fresh ingredients that may vary. It is intended to be a quick light dish, rather than a dish in a heavy sauce. Pomodoro means tomato in Italian.
Pomodoro sauce is a type of Italian tomato sauce that is often served over cooked pasta. Like marinara sauce, pomodoro sauce is made from tomatoes, garlic, olive oil and fresh basil. Pomodoro sauce is somewhat thicker than the traditional marinara sauce, because it is simmered longer.
Making a fresh Pomodoro sauce at home is easy n simple.
Always use a basic recipe, which would be quick to make.
Pomodoro sauce is a basic and Italian tomato based sauce.
INGS
3-4 Tomatoes; blanched n chopped,
4 tablespoons Olive oil,
4-5 cloves Garlic, chopped,
2 teaspoons Sugar,
1\4 cup of freshly chopped Basil,
2 tsp Cream,
Pepper powder n Red chilly flakes to taste,
Little of any herb enhance flavor,
Salt to taste.
Method
Put the tomatoes into a blender and blend until smooth.
Heat a pan add oil, add the cut onions, garlic, also add the tomatoes. Also add the basil, cream, sugar, salt n pepper powder to taste.
The ' Pomodoro sauce ' is best served over al dente pasta with a sprinkle of fresh grated fresh parmesan cheese. The homemade pomodoro sauce will keep fresh for one week in the refrigerator.
