Cake or pastry flour is too "soft" for making bread as it should be a bit chewy. Avoid self-raising flour as well. All purpose is fine, but bread flour will be labeled as "bread flour," which is a "high protein flour," or "flour for bread machines" is the best. It has a higher gluten content, so will respond to kneading better.

Yeast : Make sure the yeast is fresh. Active dry yeast, sold in individual packets, is the easiest type to use, and keeps well in your pantry. It is always better to check the 'best if used by' date on the packages, and one should follow it.
tip three
All purpose flour is best 4 bread recipes. Don't use cake flour because there isn't enough protein in that type, and your bread will fall because the dough won't be able to withstand the pressure of the gasses the yeast creates.
