CURRY RECIPES COLLECTION...


Indian cuisine consists of thousands of regional cuisines 
which date back thousands of years. All the dishes using
various Indian spices, herbs, vegetables and fruit.
Indian cuisine is also known for its vegetarian cooking.
Indian Curries are popular world over. Curries from 

Punjab are heavy with spice and are hot and more oily. 
Gujarati curries are sweetish, Maharashtra's curries are balanced, they are hot, sweet and sour.
Kerala curries and some south Indian curries contain

coconut oil which give it a special flavor and taste. 
South Indian curry is generally made using coconut paste
or grated coconut. Coconut milk is used in the coastal areas more as coconut is a part of daily cooking. Potato is the most used item in making vegetable curries. Pumpkin is the second most popular vegetable curry after potatoes..
The ' curry ' is in gravy form also known as rassa means gravy.
There many ways of making the curry, usually made with potatoes.
This is a good accompaniment with any Indian Bread,

such as Chapati , Phulka or Poori.
A QUICK POTATO CURRY
IN THE PIC, TOP LEFT SIDE..
Ingredients:
1 Cup Potatoes, boiled n cut,
4 - 5 Garlic cloves peeled,
1 Onion, cut,
2 Green chillies slit,
2 Tbsp Oil,
1 Tsp Fenugreek seeds,
1 Tsp Red Chilly powder,
1/2 Tsp Turmeric powder,
1 Cups Coconut milk,
Salt to taste.
2 Tsp Tamarind pulp,
Method:
Heat oil in a pan and fry the garlic, onions and chillies over gentle heat. Remove from the pan and keep aside.
Now add fenugreek seeds to the oil in pan and stir over low

heat just until they are golden.Also add the chilli powder and turmeric and boiled potato, fry for a few seconds, then add the coconut milk, salt and stir.
Now add the garlic, onions and chillies and allow to simmer, 

also add the tamarind pulp n allow the curry to cook for 10 minutes.
Serve hot.
