1..MAKE TASTY GARLIC BREAD BY CUTTING A FRENCH LOAF INTO SLICES AND APPLY BUTTER MIXED WITH GRATED GARLIC + HERBS + CHILLY FLAKES, PUT IN OVEN AT 200 DEGREES CENTIGRADE FOR 10 TO 15 MINUTES...


2..MAKE BREAD TARTS AND CANAPES BY CUTTING THE SIDES OF BREAD SLICES THEN ROLL A LITTLE WITH A ROLLING PIN, APPLY BUTTER PUT IN COOKIE MOULDS , BAKE IN OVEN FOR 15 MINUTES OR UNTIL GOLDEN BROWN AT 200 DEGREES CENTIGRADE.. WHEN DONE FILL THESE TARTS OR CANAPES WITH ANY STUFFING OF CHOICE, TOP WITH CHEESE THEN PUT ONCE AGAIN IN OVEN UNTIL CHEESE MELTS..


3..BAKE SPAGHETTI, VEGETABLE AU GRATIN, LASAGNE OR CORN|SPINACH IN WHITE SAUCE AT 200 DEGREES CENTIGRADE FOR 2O MINUTES..


4..BAKE RAVIOLI AND CANNELONI AT 200 DEGREES FOR 10 MINUTES.
.

5..PIZZA WITH A READY MADE BASE, FIRST PUT FOR 5-8 MINUTES AT 150 DEGREES THEN TOP IT AGAIN PUT IN OVEN FOR 8-10 MINUTES OR UNTIL CHEESE MELTS.
.

6..PUT A ASSEMBLED BIRYANI DISH IN OVEN AT 200 DEGREES FOR 15-20 MINUTES..

UNUSUAL PIZZA
INGS: 1 Large Size Potato, cut into slices,
1 Tomato, blanched and cut,
2 Tbsp Oil,
1 Onion chopped,
4 Tbsp Capsicum chopped,
2 Tbsp Corn,
1 Tbsp Tomato Sauce,
1 Tsp Garlic chopped,
1 Tsp Chilly n Garlic Sauce,
1 Tsp Herbs, Chilly flakes n Oregano,
2 Tbsp Cheese grated,
A pinch Sugar,
Salt, Red chilly pd and Pepper pd to taste.

METHOD: Wash, peel and make slices of the potato.
Apply one drop oil on each slice, sprinkle some salt,
Chilly pd, pepper pd and herbs. Put all slices in a
greased tray and in a preheated oven at 150 degree,
for 5 minutes.
Make a pizza sauce, so put a pan to heat add little oil
in that add some cut onion, garlic, capsicum, stir for few
seconds. Then add the blanched tomato, both sauces, herbs, salt, pepper pd and sugar. Let it cool then grind in a mixer jar. Again put to heat so that it can thicken.
Put a pan to heat add little oil in that some onion, capsicum, Corn, salt, pepper pd, chilly pd, herbs and chilly flakes. Now on the potato pizza type base apply some tomato pizza sauce, spread some onion|corn topping and grated cheese. Put in oven at 150 degree centigrade for 5-8 minutes, check if done.
SERVE HOT INSTANT , QUICK PIZZAS…..

KIDS LOVE IT COOKIES

KIDS LOVE IT
INGS: 20 Tbsp Fine Flour,
2 Tbsp Castor Sugar,
2 Tbsp Butter,
1\4 Tsp Baking Powder,
A Drop Vanilla or Chocolate Essence,
1 Tbsp Curd,
1 Tbsp Chocolate Powder,
2 Tbsp Chocolate Chips,
Little milk ( 1 Tbsp ).

METHOD: In the fine flour rub the butter, add
sugar, baking powder, chocolate powder, essence, chocolate chips, mix well and this should resemble like bread crumbs. Now make a dough using the curd and as much milk needed. Take the dough and roll it out, sprinkle some flour before starting to roll. Roll out a thick base and cut into stripes, then further cut
into pieces. Preheat the oven to 120 degree centigrade and arrange all in a greased baking tray, put in oven for 20 minutes, check if done.
Lovely cookie type biscuits are ready in minutes.

DAL TADKA SPECIAL

DAL TADKA SPECIAL
INGS: 1 Cup Tur Dal,
1 Onion chopped,
1 Tomato chopped,
1 Green Chilly chopped,
1 Whole Red Chilly,
2 Tbsp Garlic chopped,
A Piece Ginger chopped,
1\4 Tsp Garam masala,
1 Tsp Red Chilly powder,
1 Tsp Coriander powder,
1\8 Tsp Cumin seeds,
1\4 Tsp Turmeric powder,
A Pinch Asafoetida,
1 Tbsp Ghee| Oil,
Salt to taste.

Method: Soak Tur dal then pressure cook it until soft.
Boil the dal with salt, turmeric powder, coriander powder and garam masala. After few minutes of boiling it, churn it. Put a pan to heat, add cumin seeds, asafetida, green chilly, garlic, whole red chilly, onion, stir.
Now add the cut tomato, red chilly powder, again stir for few seconds then add this tempering to the boiled dal. Check salt and serve hot with a lemon wedge.

"MERRY X'MAS" 2 ALL

TWO LAYERED CUSTARD

2 Tbsp grated Chocolate,A drop Butter,
1 Tbsp Raisins,
1 Piece Fig ( anjeer cut into small pieces).

METHOD: Soak in hot water the fig and raisins, then drain the water and cut into small pieces.
Put milk to boil, mix the vanilla flavor custard powder and sugar. This custard will be divided into two. In the first one add the cut raisins and fig. In the second one add the cocoa powder and the chocolate powder.
Crush the biscuits finely, add a drop of butter, mix well. In a dessert at the base put the biscuit crush, press it, on this put the half chocolate custard and top layer is the custard with raisins and fig. Garnish of grated chocolate is ideal. Serve chilled.

TASTY PASTA WITH GARLIC BREAD

INGS:- 2 Cups Boiled Penne Pasta,
1 Cup boiled Vegetables (carrot, cauliflower,
broccoli, beans, babycorn, any other of choice,
2-3 Tomato blanched and pureed,
1 Onion cut,
4-5 Tbsp Capsicum, cut,
2-3 Tbsp Butter,
2 Tbsp Tomato Sauce,
1 Tbsp Chilly Sauce,
1 Tsp Chilly flakes,
1 Tsp Oregano and Herbs,
2 Cups White Sauce,
1\2 Cup Cheese grated,
1\2 Tsp Pepper powder,
1 Tsp Sugar,
1 Tsp Ginger| Garlic paste,
Salt to taste.

METHOD: Boil the penne pasta with salt and little oil,
drain the water and keep aside.
Make the white sauce and keep aside.
Saute the boiled vegetables in one spoon butter and sprinkle some salt, chilly flakes and herbs. Keep aside.
Put a pan to heat, add butter, the onions and capsicum, stir for few minutes, add ginger|garlic paste. Then add the tomato puree, chilly flakes, herbs, oregano, pepper pd, chilly sauce and tomato sauce, add salt, sugar. Now assemble all in a greased baking dish.Pre heat the oven, grease a dish and in that at the bottom spread the paste on it the vegetables, the tomato gravy (concasse), white sauce and top with the grated cheese. Put in oven, until cheese melts. Serve with tasty garlic bread.

INGS: 1 Boiled Potato cut into rounds,
1 Onion cut into rounds,
Few Pieces of Capsicum, cut into rounds,
Few Pieces of Tomato, cut into rounds,
Few Pieces of Small Brinjal, cut into rounds,
1 Tsp Butter,
1 Tsp Garlic paste,
2 Tbsp Vegetable Soup powder,
2 Tbsp Mushroom Soup powder,
2 Tbsp Grated Cheese,
1\4 Tsp Chilly flakes and oregano,
Salt and Pepper powder to taste.

Method: Put a pan to heat, add the butter in that add
onion, capsicum, brinjal and tomato slices. Stir for few
minutes then add the potato slices, chilly flakes, oregano, salt and pepper powder. Now another pan to heat, in that add a mixture of the vegetable soup powder, mushroom soup powder and garlic paste, add few spoons of water, check salt and also add pepper powder. Grease cookie moulds, in that arrange the vegetable layer on it the soup gravy and top it with grated cheese. Put in pre-heated oven, until cheese melts.
SERVE WITH PASTA, GOES WELL..

INGS: ONE CORN BOILED THEN MADE INTO 4 PIECES..
2-3 TOMATOES, BOILED,
1 ONION CUT,
1-2 CARDAMOM, CLOVES AND A PIECE OF CINNAMON,
1 TBSP OIL, 1 TBSP CORN FLOUR, 1 TSP SUGAR,
1 GREEN CHILLY, A PIECE OF GINGER, 2-3 CLOVES OF GARLIC,
1 TBSP CREAM, 1\2 TSP RED CHILLY POWDER,
SALT AND PEPPER POWDER TO TASTE..

METHOD: BOIL THE CORN AND MAKE INTO 4 PIECES.
BOIL TOMATOES AND GRIND TO GET A PUREE (SIEVE IT).
GRIND TOGETHER THE ONION, GREEN CHILLY, CARDAMOM, CINNAMON, GARLIC, GINGER AND RED CHILLY POWDER TO A FINE PASTE. PUT A PAN TO HEAT ADD OIL, THE GROUND PASTE AND STIR UNTIL LEAVES THE SIDES OF THE PAN, NOW ADD THE TOMATO PUREE, COOK FOR FEW MINUTES. ALSO ADD CORN PIECES, SALT,
PEPPER POWDER, SUGAR AND CREAM, SERVE HOT WITH RICE.

The Chef's Knife:
A chef's knife is an all-purpose knife.

This knife used to trim vegetables and fruits. It is a small knife

 A Boning knife is to separate uncooked meat cleanly from the bone.
The blade is about 6 inches long with a pointed tip.

Slicing Knife or the Carving knife has thin edge blade
for carving poultry, fish, etc. The carving knife is also called
‘slicer’.

The Cleaver knife has a wide blade to cut through bones
and joints of the meat. It is also used to crush garlic.


Serrated Knife
This is a scalloped edge knife used to slice bread. The scalloped teeth looks like
the ‘saw’ type notches.

INGS: 1 Cup Yellow Moong Dal,
1 Onion cut,
1 Green Chilly cut,
Few Bread Slices,
1\8 Tsp Turmeric Powder,
1\2 Tsp Red Chilly Powder,
Some Green Chutney,
Oil to fry,
Salt to taste.



METHOD: Cut roundals from the bread slices.
Soak moong dal for 4-5 hours, then drain the water
and grind in a mixer jar with the green chilly, turmeric
powder, red chilly powder and salt to taste. Grind little
coarsely. Take this in a bowl, add cut onion, mix well.
Put oil to heat, on each bread round, first apply the green chutney and on it the moong dal paste as a thin layer.Put in oil to fry with bread side going in first then turn, fry until golden brown. Serve with chutney and tomato sauce.

SUPER BREAD CROUTON CHAAT
INGS: 1 Slice Toasted Bread,
1 Green Chilly cut,
1 Potato boiled and cut,
1 Tomato Small Size cut,
1 Onion cut, 2 Tbsp Capsicum,
8-10 Pieces of Cottage Cheese (Paneer),
2 Tbsp Green Chutney,
2 Tbsp Sweet Chutney,
Some Chaat Masala,
Sev and pomegranate for garnish,
Salt and Red Chilly Powder to taste.

METHOD: Toast one slice of bread then cut into croutons. Put a pan to heat, add very little oil then stir fry cottage cheese, onion, capsicum, green chilly, potato also sprinkle some salt and red chilly pd. Take this in a bowl and just before serving mix the
bread croutons, tomato, chutneys, chaat masala. Check the salt and red chilly pd. Garnish on top with pomegranate and the sev. Make and serve so that it is crisp..

CLUSTER BEANS SUBZI
INGS: 250Grams Cluster Beans,
1 Tbsp Oil,
1\4 Tsp Cumin Seeds,
A Pinch Asafoetida,
1 Tsp Red Chilly Powder,
1\2 Tsp Turmeric Powder,
2 Tsp Coriander Powder,
1 Tsp Mango Pickle’s oil with it’s masala,
A Pinch Soda-bi- Carb, Salt to Taste.


METHOD: Boil the cluster beans with a pinch soda,
until soft. String each bean and break into half if long.
Put a pan to heat, add oil, cumin seeds and a pinch asafoetida. Put all cluster beans and the masalas, mix well ( also add the pickle oil and masala). Sprinkle some water and cook for 5 minutes.
Serve hot

TANDOORI TYPE SANDWICH

TANDOORI TYPE SANDWICH
INGS : 2 Slice Bread,
1 Slice Boiled Potato,
1 Slice Onion,
1 Slice tomato,
2 Pieces Paneer,
2 Pieces Capsicum.
Some Chaat masala.

MARINATE: 1 Tbsp Curd,
1\2 Tsp Ginger| Garlic Paste,
Salt and Red Chilly Powder to Taste.

METHOD: Cut the sides of the bread slices and apply butter. Cut roundals of vegetables like tomato, onion and the boiled potato. Also take pieces of paneer and capsicum, add to the marinate. Let it marinate for half an hour then on a non-stick tava, cook the marinated pieces until golden brown. Apply green chutney on the buttered sides of the bread and place the cooked pieces of vegetables and paneer(break into smaller pieces, if needed). Sprinkle some chaat masala, cut and serve.

INGS : 1 Tbsp Honey,
1 Tbsp Cocoa Powder,
1 Tbsp Chocolate Powder,
1\2 Tbsp Butter,
2 Cookies Moulds,
1 Tbsp Raisins (soaked and cut),
1 Tbsp Almonds flakes or cut thinly,
2 Chocolate flavored cream Biscuit,
A dot or a drop of Butter.

METHOD: Mix together honey, cocoa powder, butter,
chocolate powder. Make flakes of almonds and cut the
soaked raisins. In a bowl crush the biscuits well ,add the raisins and almond flakes. Grease the cookies moulds, at the base set the biscuit mixture, press well. On this spread the chocolate mixture. Set in fridge , de mould and serve.

SPICY MEXICAN SOUP
INGS : 1\2 Cup Small Kidney Beans(Rajma),
1 Tbsp Oil,
3 Tbsp Onion chopped,
2 Tbsp Tomato chopped,
1 Tbsp Chilly Sauce,
1 Tbsp Tomato Sauce,
2 Tbsp Cheese grated,
Few Nachos Chips
Salt and Sugar to taste.

METHOD: Soak the kidney beans for 6-8 hours then pressure cook until soft. Grind in a mixer jar to a fine paste. Put a pan to heat, add oil, onion and stir for few minutes then add the cut tomatoes and tomato sauce, chilly sauce. Mix well. Now add the boiled and crushed beans paste, add salt and sugar.
If need be add some water or use the boiled bean’s stock, cover and cook for 5 minutes. Serve hot with a garnish of grated cheese and few nacho chips

INGS: 8-10 Tbsp Instant Noodles (2 minutes
Instant noodles, boiled),
2 Tbsp Carrot (grated),

4-5 Tbsp Bengal Gram Flour,

Oil to make pancakes.


METHOD: Boil the instant noodles for few minutes.
Take a bowl , mix all together except the oil to make
the pancakes. Sprinkle some water if needed.
Put a nonstick tava to heat. Spread some batter and make the pancakes.
Make small size pancakes, using oil, cook

3\4 Cup Vegetables like Cauliflower,

METHOD: Put a pan to heat add oil, ground paste

PANEER SHASHLIK IN GRAVY

PANEER SHASHLIK IN GRAVY
INGS: GRIND TO A PASTE:
2 Tomatoes (blanched),
1 Onion chopped,
1 Green Chilly chopped,
A piece of Ginger,
2-3 Cloves Garlic chopped,
2-3 Almonds and Cashewnuts,
2 Tbsp Curd,
1\4 Tsp Turmeric Powder,
3\4 Tsp Red Chilly Powder,
1\2 Tsp Garam masala Powder.

PANEER SHASHLIK:
6-8 Toothpicks,
6-8 Pieces of Paneer ( cottage cheese),
6-8 Pieces Capsicum ( cut into small pieces),
6-8 Pieces Onion ( cut into small pieces),
6-8 pieces of Tomato ( cut into small pieces).

MARINATE: 4 Tbsp Curd, 2Tsp Garlic paste,
Little Salt and Red Chilly powder to taste.
2 Tbsp Oil, 2 Tbsp Cream and 1Tbsp Sugar.

METHOD: On the toothpicks arrange small pieces
of capsicum, tomato, onion and paneer. Mix the
marinate and drizzle on the skewered toothpicks.
Put a pan to heat add little oil and put all marinated
Toothpicks, when done keep aside.
FOR THE GRAVY :-
Grind all ingredients to a very fine paste.
Put a pan to heat add the oil, the ground paste and cook until leaves the sides of the pan. Now add salt, cream, sugar, if a few water is needed add, cover and cook. Drizzle the gravy on the paneer shashlik sticks to serve.

INGS: 12 Baby Potatoes,
3 Small size Tomatoes,

a cardamom and a piece of cinnamon),

1 Tbsp Coriander Powder,
1\4 Tbsp Garam Masala.
2 Tbsp oil, 1Tbsp Ghee, 
2 Tbsp Cream.
Salt, Sugar to taste.

METHOD: Soak the whole red chillies in hot water.
Boil the baby potatoes and in a pan with little oil, sauté for five minutes, sprinkle some salt and red chilly powder. Slice the onion and in a pan stir fry until golden brown.
In a mixer put cut tomatoes, cut green chillies, red chillies, a piece of ginger, few garlic, fried onion curd, the nuts and all masalas. Grind to a very fine paste, use water if needed.( except the oil, ghee, cream and baby potatoes).
Put a pan to heat add oil, the ground paste cook until oil appears or leaves the sides of the pan. Now add the baby potatoes, some cream and check the salt and sugar as per taste. Cover and cook on slow flame
for few minutes, serve hot.

QUICK PASTAS



       
QUICK PASTAS
INGS: 2 Cups Boiled Pasta(Penne),
           2 Tomatoes blanched and pureed,
          1 Onion chopped,
          1 Tbsp Ginger| Garlic paste,      
           2 Tbsp Capsicum,
           2 Tbsp Corn boiled,
           1 Tbsp White Sauce,
           2 Tbsp cheese grated,
           2 Tbsp Tomato Sauce,
           1 Tbsp Chilly Sauce,
           1 Tbsp Oil,
            1\4 Tsp Chilly Flakes,
            1\4 Tsp Oregano,
            1\2 Tsp Sugar,
            Salt and pepper powder to taste.

METHOD: Boil the pasta in lots of water with oil and some
salt added to it. Put a pan to heat add the oil, onion, ginger garlic
paste and the cut capsicum. Grind in a mixer the blanched tomatoes.
Now add the tomato puree, corn, chilly sauce, tomato sauce, white
sauce, chilly flakes, oregano, sugar, salt, pepper pd, also add the pastas
Mix well, check the salt and add the cheese . Serve hot with a little cream 
and some grated cheese.

TWO CHEESE SPINACH STARTER













INGS: 3-4 Tbsp Onion, 1Tbsp Cottage Cheese,
3-4 Tbsp Spinach (cut finely ), 1Tbsp Cheese( grated) ,
8-10 Tbsp Bread Crumbs,one Potato boiled and mashed,
Salt and pepper pd to taste, 1\2 Tsp Oil.


METHOD: Put a pan to heat add oil, onion, stir for few seconds then add the cut spinach and salt , pepper pd to taste.
Mash the boiled potato add salt,half the bread crumbs and the spinach. Mix well, make 4 balls out of this.
Now take the grated cottage cheese and the cheese , add little pepper pd and make small 4 balls out of this .
Place the small cheese balls inside the bigger potato balls, roll well and coat with the bread crumbs, fry in hot oil. Serve with tomato sauce.

TYPICAL UPMA

TYPICAL UPMA
INGS: 2 Cups Semolina (Rava) ,
1 Onion chopped,
1Tbsp Oil ,
1\4 Tsp Mustard Seeds,
1 Tsp Urad Dal,
1 Green Chilly chopped,
Few Curry Leaves ,
1-2 Whole Red Chilly, 5 Cups Water,
Salt to taste.
METHOD: Put the water to boil. Take it off and keep aside.
Put a pan to heat add the oil in that add the mustard seeds, urad dal, curry leaves, green chilly, whole red chillies and the onion, stir for few minutes. Now add the semolina (rava), dry roast it and add the salt , the boiled water. Stir until thickens.
Garnish with green coriander leaves. Serve with coconut chutney.

USEFUL TIPS

TIP: AFTER HAVING SQUEEZED OUT THE JUICE OUT OF THE LEMON RUB THE SKIN WITH SALT ON COPPER, BRASS BOTTOM VESSELS THEY WILL SPARKLE...

LOVELY CUSTARD

LOVELY CUSTARD
INGS: 1 Cup milk,
1 Tbsp Vanilla Custard pd,
2-3 Tbsp Sugar,
1\2 Cup Fruits like Apple,
Banana, Chiku and Pomegranate.

METHOD: Mix in milk the custard powder
and put to boil, when it starts to thicken add
the sugar. Mix well. Allow to cool.
Cut the fruits into small pieces, add to the custard.
Put to chill in the fridge section and serve with a
drizzle of chocolate sauce in the inner wall of the
glass in which to serve.

INGS : 4-5 Small Burger Buns,
             7-8 Tbsp Baked Beans,
             2-3 Tbsp Onion (Cut),
             3\4 Tbsp Chilly Sauce,

             3\4 Tbsp Sugar, 1 Tsp Oil,
             Salt and Pepper pd to taste.

METHOD: Slit the burger buns into half,
apply butter, put in a pre heated oven at
150 degrees for 4-5 minutes. Check and
take them out.
Put a pan to heat add the oil, cut onion and
Stir. Now add the baked beans, chilly sauce,
tomato sauce, sugar and salt , pepper pd to
taste. Put the baked beans on the buns and
top with grated cheese. Again put them in the
oven for few minutes.

INGS: 2 Hot Buns,
1\2 Cup Mixed Vegetables(like Carrot,
Beans, Corn, Cauliflower, Babycorn, etc),
1 Tbsp Cottage Cheese (Paneer),
1 Tbsp Onion Chopped,
1 Tbsp Capsicum Chopped,
1 Tbsp Chilly Sauce,
2-3 Tbsp White Sauce,
1\2 Tsp Oregano,
1\2 Tsp Chilly flakes,
4-5 Tbsp Butter,
5-6 Tbsp Cheese Grated,
Pepper pd n Salt to taste.
METHOD: Boil the mixed vegetables until half cooked.
Drain the water. Put a pan to heat add one table spoon butter, the onion, capsicum both cut into small pieces. Now add the boiled vegetables, chilly sauce, white sauce, oregano, chilly flakes, mix well.
Also add salt and pepper powder. Take it off the heat and add small cut cottage cheese. Grate the cheese. Preheat the oven to 180 degrees, Cut the hot dog buns on top leaving the sides, then scoop them out.
Apply butter all over the buns and put the vegetable filling inside and top it with the cheese and put in hot oven until the cheese melts.

JEERA RICE


JEERA  RICE
INGS: 5 Cups Cooked Rice,
            3 Onions , Sliced ,
            3 Green Chilly, Slit,
            2Tbsp  Oil,
            2 Tsp Cumin Seeds, (jeera),
            2 Tsp  Cumin Powder, (jeera),
             Salt to taste.
METHOD: Put a pan to heat add the oil,
cumin seeds and the green chillies, also add
finely sliced onions, stir until turn brown in color.
Sprinkle some salt. Now add the cooked rice, cumin
powder and salt to taste. Serve with any type of dal.

SPICY POTATOES


SPICY  POTATOES
INGS: 2 Large Potatoes,
            2 Tsp Schewan Sauce,
            2 Tsp Chilly Sauce,
            1 Tsp Garlic Paste, 
            2 Tbsp Corn Flour,
            1\4 Tsp Red Chilly Powder,
            Salt to taste.
For the Stir Fry: 1 Onion,
                            4-5 Cloves Garlic,
                            2 Tbsp Schewan Sauce,
                            2 Tbsp Chilly Sauce,
                            2 Tbsp Tomato sauce,
                            1 Tbsp Oil, Salt to taste
                            1\2 Tsp Sugar.
                              .
METHOD: Boil the potatoes with the skin.
Cut into big pieces with the skin as wedges.
Marinate the potato pieces in schewan sauce,
chilly sauce, garlic paste, chilly pd and salt.
Put oil to fry to heat, on the potato wedges sprinkle
corn flour. Fry in oil and keep on paper tissue.
Put a pan to heat add the oil, garlic, onion, stir add
the chilly sauce, schewan sauce, tomato sauce .Also add the fried potato  wedges and  sugar, salt to taste. Serve hot.
