YEAST...CONT

Dry yeast  can be stored longer than fresh yeast.
Dry yeast packed in a plastic  bag or a small, 
plastic container with a lid.  
Store in the refrigerator, in a cool place.
Fresh yeast is slightly yellowish, soft and moist,
easy to  crumble. Store fresh yeast in the refrigerator,
well wrapped, or in the freezer.
There are various uses of yeast in cooking.. 
Yeast is used for bread making and sweet pastries
like cinnamon roll, pizza dough and in making naans.
When adding yeast it is important to know that yeast 
eats sugar, glucose to be specific. It also starts a
fermentation process.
Salt is added to the dough as it enhances the taste 
and flavor. Small amounts of salt can actually helps 
yeast function better.

Naan is a leavened, oven-baked flatbread.
A BASIC ' NAAN' RECIPE..
350 g Fine flour,
5 tablespoons yogurt,
5 tablespoons warm water,
 ½ teaspoon active dry yeast,
½ teaspoon salt,
pinch of sugar ,
ghee or butter to apply.
METHOD..
Add warm water, sugar and yeast.
Mix well until  the yeast  dissolves.
Mix flour and salt in a bowl. 
Make a well in the center.
Add yeast mixture and yogurt and make
into soft dough using water.
Apply oil on the  dough leave it 
covered with a cloth for atleast 3 hours.
 Divide the dough making balls,
about 4-6 pieces.
Roll into  6-8 inch ovals shape.
Cook for three minutes on each side 
under a preheated griddle,
until  brown spots appears.
Serve hot with ghee or butter
applied on top..
