Most baby vegetables are fully ripe miniature vegetables grown to perfection. Others are immature vegetables picked before fully grown. Perhaps the newest culinary trend in home and restaurants is baby veggies. These are not simply vegetables that are picked before they are mature, but rather, they are tasty, tender crops especially developed to grow small.
These miniature treats are also healthy.  Baby Artichokes, Baby Avocados also are known as cocktail avocados.
Baby Artichokes,the large ones are on the center stalk, smaller ones on side branches and “baby” artichokes at the base. The shape of the artichoke also varies.
Baby Asparagus from Thailand are very limited due to hot weather. The asparagus plant is a member of the lily family, which also includes onions, leeks and garlic.
Baby Beets are available in gold, red and long red.

Baby Capsicums belongs to the nightshade family and is related to the tomato and potato. Baby capsicums are little versions of the block paprika. These baby paprika´s come in green, red, orange and yellow. The baby capsicums are sweeter than the bigger ones and contain no seeds.
The Red Baby Cabbage has dark red, almost purplish leaves.
Baby cabbage white has a firm, solid head with smooth leaves.

Baby Leeks are a member of the onion family and the Leeks are also called ‘scallions’ and ‘The Gourmet’s Onion’.
Baby pumpkins is a type of squash and is a family member of the cucumber and melon.
