Vegetable Jalfrezi ...


Vegetable Jalfrezi
Ings :
2 cups Boiled vegetables like carrot,
beans, cauliflower, babycorns.
1 Potato, cut in long pieces,
1\2 cup Tomato puree,
1 Tomato cut,
2 tbsp cut Garlic,
1 Onion cut,
2 Spring Onion cut,
1\2 Capsicum cut in long slices,
2 Green Chilly cut,
1 tsp Ginger cut,
2tbsp Tomato sauce,
1tbsp Chilly Sauce,
1 tsp chilly powder,
2 tbsp Oil,
1 tsp Sugar,
Salt to taste.
Method
Boil the vegetables in water in which
some salt is added.
Drain the water, keep aside.
Fry the potato slices.
Put a pan to heat, add oil, add green chilly, garlic, onion, spring onion and capsicum.
Stir for few minutes. Now add the cut tomato and the tomato puree. Also add tomato sauce, chilly sauce, sugar, chilly powder, salt and the boiled vegetables, stir and mix well.
Serve with a garnish of spring onions.
