Sai Bhaji

 
Sai Bhaji
Simple, quick n healthy.
A mix of dal with green vegetables.
Ings
1 Onion cut into pieces,
2 Potatoes, peeled n cut into pieces,
4 Small size Brinjals, cut into pieces,
1 Tomato, cut into pieces,
1\ 4 Cup Fenugreek| Methi leaves,
1 Cup Spinach| Palak, cut,
2 Tbsp Dill leaves, cut,
1 Tbsp Green Garlic, cut,
1 Tsp Ginger grated,
1 Tsp Garlic grated,
1\2 Cup Channa dal, soaked,
1\4 Tsp Turmeric powder,
1\2 Tsp Red Chilly powder,
1\2 Tsp Garam masala,
2 Tbsp Oil,
1\8 Tsp Asafoetida| Hing,
2 Pinch Cumin seeds,
Salt to taste.
Method
Put a pressure cooker to heat, add oil, cumin seeds, asafoetida, also add ginger, garlic, onion n tomatoes. Now add all the rest of the ingredients also. Also add the masalas n give a stir. Mix well.
For pressure cooking add one cup water and close the lid of the cooker, do until 4-5 whistles. When the cooker cools down,
pour the bhaji into a pan, once again put to heat, mash the bhaji, check the seasoning.
Serve hot with rotis or parathas.
