cookery facts and tips..

Bay leaves, or laurel, are the dried leaves of the evergreen tree Laurus nobilis. The leaves are light green in color and brittle in dried form. Used in soups, stews, stocks, pickles, marinades, tomato dishes, curries, gravies and meats.
Saffron is the dried yellow stigmas of the violet  flowers of Crocus sativus, a member of the Iris family. The stigmas must be harvested by hand, and it takes 225,000 of them to make one pound of saffron. Saffron is mainly used as a colorant and flavoring agent.
A Cajun seasoning blend might include garlic, onion, cayenne pepper, black pepper, dry mustard, paprika, thyme, cumin and/or celery seed.
Marinades sometimes require advance planning, they're easy to throw together with on-hand ingredients, they increase the flavor of food and also soften them. Marinades consist of oil, an acidic ingredient and various herbs, spices and seasonings. The acidic ingredients could be vinegar, wine, yogurt, and pineapple, lime, orange and lemon juices.
