Potato wedges, also called ' jojos,' are a variation of french fries.
As its name suggests, they are large, often unpeeled wedges of
potatoes that are either baked or fried. They may be seasoned
with salt, pepper and spices prior to cooking, to give a crispy
flavored 'skin'. Potato wedges are popular snack foods..
They are served with condiments such as sour cream, sweet
chilli sauce, brown sauce and ketchup. Other condiments that
may be eaten with potato wedges include barbecue sauce,
mayonnaise and ranch dressing.

A potato wedges recipe..
4 tbsp Olive Oil,
1/2 tsp Salt
1/4 tsp Pepper Powder,
1/2 tsp each Basil, Thyme, Oregano
1/4 tsp Paprika or Chilly flakes,
4 Potatoes, cut in wedges (quarters),
4 tbsp Grated Parmesan Cheese.
Mix oil and seasonings together. Roll the cut potato wedges in the mixture.
Put on a baking dish. Bake at 450 degrees for 15 minutes. Sprinkle Parmesan cheese on the potatoes. Bake for few minutes, until cheese melts. Serve hot…

Another interesting way to make the tasty potato wedges..
4 Potatoes, washed, unpeeled and
Cut into wedges,
3 Tbsp Oil,
1 Tbsp. Parmesan cheese,
1/4 Tsp Garlic powder,( use grated garlic ),
1/2 tsp. Paprika Powder or Chilly flakes,
1/8 Tsp Pepper Powder,
1 Tsp Ground Cumin powder,
1\2 Tsp Chilly powder,
Salt to taste,
1 Onion cut into large pieces,
1 Tbsp cut Coriander leaves.
Wash potatoes and cut into wedges and mix all ingredients together.
Arrange the potato wedges on a baking dish. Bake at 375 degrees for 40 minutes, until golden brown and tender. Brush oil if needed.
