Carrot | Gajar Halwa, a quick recipe

 
Gajar Halwa is one of the most popular traditional Indian desserts. Gajar Halwa is made from fresh carrots and cooked in milk and ghee and garnished with nuts. Gajar Halwa is very popular in Indian households and is considered tasty and easy to prepare dessert. In India, carrots are available in orange color and also reddish color. Khoya or condensed milk or cream if added then makes the halwa richer and yummy.
Carrot | Gajar Halwa

3-4 fresh grated carrots, 2 tbsp ghee, 4 tbsp milk, 2 tbsp cream,
8 peda, penda instead of khoya (thickened milk),1-2 almonds blanched and slivered.
METHOD
Wash and grate the carrots. Finely Slice the nuts.
Put a pan to heat add ghee and once it melts add the grated carrot, stir until the carrots turn a to dark orange color. Allow all moisture to evaporate. Now add cream, milk n grated peda| penda. Stir until ghee appears or the mixture leaves the sides of the pan.
Keep a greased plate ready, pour the carrot halwa.
Allow to cool. Garnish with slivered almonds.
