WHAT IS A ‘SAUCE’ . . Schezwan Sauce recipe

WHAT IS A ‘SAUCE’
It is any preparation, liquid or semiliquid, eaten as a gravy or as a relish accompanying food. It could also be stewed fruit, often puréed and served as an accompaniment to meat, dessert, or other food, like the cranberry sauce. A sauce adds ‘piquance’ or zest to the food.
Tips : Select bright red chillies for a rich flavored sauce.
Schezwan sauce, the spicy Chinese sauce used in so many
Chinese preparations. It gives a unique taste to the Chinese Rice, Noodles and other dishes.
 

Schezwan Sauce recipe
Ingredients
12 to 14 whole Dry Kashmiri Red Chillies,
1 cup Water,
[ soaked in warm water] ,
2 Green Chillies Cut,
2 tbsp Chopped Garlic,
6 tbsp White Vinegar,
2 tsp Sugar,
2 tbsp Oil,
2 tbsp Celery Stalk Cut,
1 tsp Salt.
2 tsp Cornflour,
2 tbsp Water.
Method
Boil garlic [ 1 tbsp ] and red chillies in one cup water, for 5 minutes.
Drain water, now grind one green chilly, garlic [ 1tbsp ]
and the red chillies to a paste.
Heat oil in a heavy pan, add ginger, chopped garlic, chopped
green chilly, Also add celery, onions and stir till onions are transparent.
Now add paste n stir for 2-3 minutes. Mix cornflour n water.
Also add all remaining ingredients n stirring continuously.
Cook for 2-3 minutes, add salt, vinegar, sugar.
Stir till sauce is thick, store in a bottle.
