Vegetable Rava Upma . .

 
Mixed Vegetable Rava Upma
Upma is a popular South Indian breakfast dish. Upma is usually made with Semolina, called Rava or Suji in India.
Upma is the most common and famous South Indian breakfast recipe which is very tasty and very easy to make.
(use the ratio 1 cup semolina/rava/suji to 2 cups water)..
Semolina is the coarse, purified wheat middlings of durum wheat used in making pasta, and also used for breakfast cereals and puddings.
Rava Upma can be made with lot of vegetables. Try adding few mixed vegetable like carrot, beans, tomato, potato, cauliflower, so mixed vegetable Rava Upma turns out very tasty and healthy option for breakfast. There are many ways by which Upma is prepared.

Ingredients
Semolina, Rava, 1 cup,
Oil 2 tbsp,
Mustard seeds 1/2 tsp,
Green Chillies 1-2, chopped,
Onion 1 chopped,
Salt to taste.
1\2 cup Vegetables like Peas, carrots, potatoes,
cauliflower, cabbage, tomatoes,
2 1\2 cups Water,
Urad Dal 2 tea spoon.
Cashew nuts n Peanuts fried, 1 tbsp, each,
Lemon juice 2 tsp, optional.
Method
Put water to boil, add the cut vegetables, except tomato.
Add little salt, cook until soft.
Put a pan to heat add oil, add mustard seeds, green chillies,
urad dal and chopped onion and fry until onions caramelise.
Now add semolina and cook until light brown color.
Also add the vegetables n water in which boiled, add salt.
Mix quickly to avoid lumps forming. The upma is done when all the water is absorbed by the rava, lastly add lemon juice n cut pieces of tomato.
Garnish with cashew nuts, ground nuts n coriander leaves.
