Peda, Pheda or Pera
Pedas are an all time favorite sweet. Pedas are like soft milk fudge. Pedas are grainy texture made with milk and sugar, flavored with cardamom.
Peda is a sweet from the Indian subcontinent, usually prepared in thick, semi-soft pieces. The main ingredients are khoya, sugar and traditional flavorings, like cardamom seeds, pistachio, or other nuts and saffron. The color varies from a creamy white to a caramel color.

khoya is a milk food widely used in the Pakistani and Indian cuisine, made of either dried whole milk or milk thickened by heating in an open iron pan.
Khoya is used as the base for a wide variety of Indian sweets.
khoya gives a rich flavor to any dish when added.
Bring the Milk to boil in a heavy bottom saucepan.
For the khoya reduce the heat and continue cooking at simmering point. Keep stirring so that milk does not stick to the base of the pan. As milk gets thicker stir more vigorously.
The khoya is cooked when the milk is reduced to a thick, dry lump. If sugar and cardamom powder are added into the khoya and kneaded for a minute until it looks like a soft dough.
TIP : When the khoya is hot, mix the sugar n make pedas, which will be tasty and soft.
If lemon juice is added after the milk has boiled & the milk coagulates. This type of khoya is ideally used for Burfi.
