Paneer is a fresh cheese common in South Asian cuisine. It is of Indian Subcontinent originated in the 6000 BC.
In eastern parts of Indian Subcontinent, it is generally called Chhena. Paneer is a homemade Indian cottage cheese. It resembles tofu in color, taste and feel.

PANEER has been made in India for generations, mainly at home. Milk is coagulated by lime juice, citric acid solution, sour whey, or lactic cultures.

Lime juice as a coagulant imparts a good flavor to the Paneer. 
Paneer is made fresh and consumed immediately.
How paneer is used in cooking...
1 Mattar paneer is a north Indian dish consisting of paneer and peas in a slightly sweet and spicy sauce. Some people also add "aloo" (potato) to it.
2 Palak paneer is an Indian and Pakistani dish consisting of spinach and paneer (Indian farmer's cheese) in a thick curry sauce based on pureed spinach. It is a popular vegetarian dish.
Palak paneer is one type of saag, which can also be made with mustard leaves.
3 Shahi paneer is a preparation of paneer in a thick gravy made up of cream, tomatoes and spices.
4 Paneer tikka is an Indian dish made from chunks of paneer marinated in spices and grilled in a tandoor.
5 Paneer ṭtikka masala is a Punjabi dish. It is essentially made from paneer tikka, which is served in a spiced gravy.
6 Paneer pakoras is a fried snack like fritter.
7 Sandesh is an Indian dessert. It is popular in Bengal region of India. Some recipes of Sandesh use chhena (Indian cheese) or paneer instead of milk.
Some people in the region of Dhaka call it Pranahara which literally means a ' heart stealer' n it is a softer kind of sandesh, made with mawa and the essence of curd.
8 Rasgulla is the first syrupy Indian cheese desserts.
9 Ras Malai consists of sugary white, cream or yellow colored balls (or flattened balls) of paneer soaked in malai (clotted cream) flavored with cardamom.
10 Kamalabhog, which mixes orange extract with the chhena, is commonly sold in Bengal.
11 Khoya paneer is a popular north Indian dish made with paneer (Indian cottage cheese), khoya (thickened milk), onion, garlic, ginger, tomato and Indian spices. It is a gravy dish and is usually spicy in taste.
12 Paneer Butter masala is also known as Paneer Makhani n is a very well known dish.
13 The famous Kadhai Paneer needs no introduction! It is paneer pieces n the wonderful fresh ground spice aroma and flavor.
14 Try 'Paneer Bhurji'.. its basically "scrambled" paneer with cumin, turmeric, spring onions, tomatoes and crumbled paneer.. and for a variation try adding the bell peppers as well.
Paneer is very closely linked to the Turkish Peynir. Even Anari is very similar in taste and texture to fresh Indian Paneer. Anari is a fresh mild whey cheese produced in Cyprus.
Most varieties of paneer are simply pressed into a cube and then sliced or chopped to use.
In Mughlai cuisine paneer is cut into cubes n added to curries or gravies. How could we forget to mention making Parathas ( Indian bread) with paneer.
No wonder Paneer is one of the few types of cheese to be widely used in Indian cuisine.
A dominant culinary symbol of north India, paneer or cottage cheese, is fast gaining favor and flavor all over the
