What are pancakes?
A pancake is a thin, flat, round cake prepared from a batter and cooked on a hot griddle or frying pan.
Pancakes are the very old beginnings of bread and pastry. 
They may be served at any time with a variety of toppings or fillings including jam, fruit, syrup, chocolate chips, or meat. 
Generally a pancake is any kind of batter, fried or baked in a skillet, on a griddle, or on any hot surface. Today pancakes are enjoyed for breakfast, luncheon, dinner and even for dessert.
Do u know ... What a pancake shot is an alcoholic drink usually made of whiskey and, normally, a butterscotch liqueur. Often referred to as a breakfast shooter.

Measure ingredients carefully.
Do not over beat the batter.
Lightly grease the griddle with butter.
It is how it is mixed ... Remember to first, combine all the dry ingredients thoroughly, seeing that no lumps are formed either by sifting them together or by stirring them well with a whisk.
Then combine all the wet ingredients in a separate bowl.
Don't skip this step. Now pour the two wet ingredients into the dry. Stir gently, just enough to moisten the dry ingredients. Over-mixing leads to tough pancakes because the gluten in the flour begins to develop as soon as liquid touches it, and the more you mix, the tougher the gluten becomes. Don't worry about lumps in the batter.
Have u ever tried replacing a liquid in your recipe with a carbonated beverage (plain or flavored seltzer water, beer, cider, ginger ale) to make your pancakes very light and tender.
Just one ladle's of batter is usually just the right amount for a perfectly sized pancake.
When making the pancake let it be just one flip only! Wait until the batter is bubbly then flip it. Once.
