Lemon rice a tasty rice variety of South India.
Which can be made easily n quickly at home.
Lemon juice gives a very tangy flavor to the rice.
Lemon Rice South Indian Style:
3- 4 cups Rice boiled with little salt,
[ Rice preferably Kolam or Poni variety ],
2 Tbsp Oil,
5-6 Curry leaves,
2-3 Pinch of Mustard seeds,
6-7 Cashew nuts,
4-5 Pinch Urad dal split,
1-2 Pinch of Asafoetida [opt ],
1-2 Whole red Chillies [opt ],
1 Green Chilly cut [opt ].
1 Lemon juice squeezed,
Salt n 1\8 Tsp Turmeric powder.
Mix all three well.
Heat oil in a wide pan and add mustard seeds, allow to splutter.
Also add all the ingredients mentioned under the tempering.
Allow the cashews n urad dal to turn light golden brown.
Now add the lemon mix n quickly add the rice and stir or mix gently.
Garnish with curry leaves and fried cashews, serve hot.
Tips 1 When boiling the rice take care so that the rice is not mushy and the grains remain separate. i.e the grains of rice should not stick to each other.
2 Also try adding sliced onion sliced & fried till golden brown.
